It is stupidly easy. I just went through with it recently. Went from an old original xbox to the Gears3 xbox. All you need is this:

Pop out your old harddrive connect it to this, plug it into the usb of the new one boot up and it will walk you through it. Just make sure that you select all the things you want to take over (e.g. saved game data) took only a couple of minutes and I was up and running.

depending on how big your current Xbox 360 hard drive is, I would buy a 360 S, and either re-use your current drive with it, or use a USB drive to transfer the contents. you can also get an official transfer cable, which may be easier.
You can buy xbox data transfer cables now that will migrate all your data from the old HDD to the new one.
If you have a large amount of data to transfer, the data transfer cable is the easiest way to go.

Would this or this work? The pictures are kind of vague and I don't quite understand how the hard drive plugs in.
As you may have noticed, the 360 and the 360S use entirely different shaped HDDs. Sucks for anyone who's upgrading an existing console.
Luckily, MS offers such gamers the Xbox 360 Hard Drive Transfer Cable. This lets you copy the entire contents of an existing 360 HDD to the new 360S HDD. I do not know if it wipes the HDD on the receiving end, but this is the cable you're looking for.
There's not really a "that old" for the 360. The original hard drives have a transfer cable that works too.
