Have a solid 100% latex mattress and I swear the guest bedroom twin is more comfortable. I like more firm though. You can get more firm latex but price goes up.

This is for the twin on amazon, they have different sizes. Look for certipure if you do go memory foam. (Its way different than the old tempurpedic days.)

Honestly if I had to do it over I'd buy a larger mattress on Amazon and the Ikea frame and slats. Just too comfy. The latex is dreamy but you have to trust you get the right firmness or you are stuck sleeping in a hammock like experience. That and the fact it weighs a ton. Good luck mattress shopping is fun!
Sleepy's is pretty expensive. I recommend a cheap memory foam mattress. I got this mattress for my little girl and it's really comfortable.

IKEA is a great place to get the actual bed.
If I were doing a 5 day build, I'd skip insulation. I was in a van this summer that I had insulated with polyiso, and when it was cold outside, it was cold inside the van, and when it was hot outside, it was super hot inside the van. I never got my electrical hooked up either, so I'd skip that too. Bought a 50,000 mAh battery bank. Never really used it. I did use a long 12v extension with a splitter to charge my phone, run a fan, etc.
I'd probably put down subfloor, that's cheapish and a one day project.
For the bed, I bought this frame for $60 and this memory foam mattress, but you could probably get a cheaper twin mattress. The nice thing about the bed frame is that you can store plenty of stuff underneath it in storage totes.
Check out memory foam mattresses on amazon. They don't need a boxspring and are super cheap if you get a 6 inch or 8 inch one. I have this one, and you can't even tell how thin it is unless you jump on it or something:

Yes, it takes a little while but it gets there. There was no smell to mine, though some people claim there was with theirs. Ive been pretty happy with it, for 150 bucks i don't think it can be beat. I ordered the 6 inch sleep master for my sisters kids, and while they aren't bad, they are definitely not as comfortable.
Regarding a bed, a 6-inch memory foam mattress is $106 from Amazon. It ships with all the air compressed out of it, so you just need to unroll it and let it puff back into shape.

Pretty much all of the foam mattresses on Amazon are highly rated and come shipped with all the air removed. You need to open them, let them grow back to full size and air out a little and they last forever with no issues with the sides losing structural integrity like a regular mattress if you like sitting on the edge. They also require no box spring. You can get a cheap bed frame from Amazon too for the same price as the mattress. all told you can spend $200 bucks for a full bed with frame and mattress.
They are very firm, however. Which I love and they don't wear out in the middle and form that body crater that a lot of normal mattresses do. There are options for different top materials like gel and memory foam and a few with little raised cooling towers that let air circulate under.
