Not in the UK, but you might want to look around for an American specialty store or the like. Amusingly enough, when I lived in France I used to buy liquid smoke from the same store I bought my UK products from.

Step up your game.

There is a serious ingredient lacking from this technique: the smokiness of a camp fire.

When I do this, I like to make my own marshmallow frosting. There are a few different ways to do this, with or without actual marshmallows. My favorite is just this method from Martha Stewart. One additional ingredient is needed though -- a dash of Liquid Smoke.

I promise that if you make your own marshmallow, smoke it up, then torch your cupcakes after you've frosted them, you'll actually feel like you're eating a s'mores.

I like to do asian style. I season the belly with char sui rub (make your own or something like this), bag it and let it sit for at least a day in the fridge. At this point you can as well freeze so it can be dropped directly in a bath at a later date.

I then do either 68C/154F for 36 hours or if I have less time 70C/158F for 16 hours. The longer one has better texture but it is a small difference.

Then cooled, pressed, and cut into 2"x2" squares. Then brushed in char sui sauce that is slightly thinned with rice wine vinegar and put under a very hot grill (broiler) to caramelize the sauce, turning so all sides are crispy.

Serve with rice, stir fried bok choi, and quick pickled cucumbers to cut through the richness.

As mentioned by someone else also save some for the Kenji porchetta recipe as that is also very good. Also the chinese steamed buns (also a SE recipe) are good if you can get the buns from an asian market.

It's a manual input error on Kraft's part. It's 15 grams of carbs, 13 of which are sugar per 2 Tbsp. Say what you will about it, Walmart is good for checking nutrition info for products.

As usual, I recommend not eating Kraft products. They are cheap because they aren't nutritionally dense and use a lot of sugar. Can I recommend this low carb friendly BBQ sauce, this or with more but acceptable carbs -- this?

I order my groceries through FreshDirect so technically I get 90% of my stuff online :).

Just in case you're not kidding, you can find the nutrition info for the entire McDonald's menu online. Google is your friend.

However, why are you paying all that money and wasting the time to drive to a drive-thru line to eat that over-priced crappy beef? Go to Costco and you can buy much better ground beef and cook up a week's worth of "burger's" in half an hour on Sunday, that you can heat up in a minute in a microwave at work, school or home. It will taste way better, be faster and save you a ton of money.

Ketchup has carbs. Pick up some Heinz Low Sugar Ketchup at your supermarket. We used to have it in bulk at an old wing place I worked at in college. I always noticed a little taste difference between the consumer size and bulk bottles. Either way, definitely good stuff. Glad you found some!

Edit: This is the bottle my old wing spot used.

Here's what my old wing place used to have in their fridge. Still says open pit, but the logo is different. Maybe 'original' flavor is slightly different from consumer size? But most likely, its the Illuminati.

My favorite is Stubb's. It's not sugar-free, but it works great in the right amount. You can't exactly slather meat in it, but you can eat a decent amount for 5-6 carbs. I've had the original and the spicy, both awesome:

Here you go, you can get this on amazon.com - it's one of the Big 3 brown sauces in the UK. There's HP, Daddies Sauce and Chop.

IMO, once you try brown sauce on smoked bacon, nothing else compares. A bread bun, lightly salted butter, an egg that is still slightly runny, two rashers of grilled, crispy smoked bacon. Perfect cure for a hangover!

If you want to stick with it make sure that you get the stuff that satisfies. You will inevitably end up focusing more on getting flavour into your food than when eating meat, this is a good thing, because you can have loads of fun.

For me umami, that sense of savouriness, or "nom, nom" is vital to help keep me happy with my diet. Cooked mushrooms, cooked tomato (lovely thick sauces), soy sauce, hard cheeses, spinach, seaweed (yup, nori is your friend), if you are going the vegan route yeast flakes are gamechanging, (or not vegan, I'm veggie but wouldn't be without it). Get them all in there somewhere and you won't even think about meat.

OK, maybe you might think about bacon. But a few tiny drops of this stuff, in a recipe with plenty of proteins, fats, umami and salty sweetness will hit the right buttons.

A word on proteins. Two words. 1) Don't worry about getting enough proteins or complete proteins or whatever, if you eat a varied diet you will get more than enough without trying, so relax on that. 2) Proteins are delicious, they also satisfy. So aim to get decent quantities of enjoyable protein (I like seitan) in there on a reasonably regular basis. Not because you need it directly but because it's fun, keeps you happy and reduces tendencies to binge on sugars and carbs.

I have an entire shelf devoted to hot sauce. Here are my faves.

El Yucateco. All of these are bomb, but my fav is the green and black habenero. I believe the Caribbean and chipotle have some sugar in them, but the rest are sugar free.

High Altitude Gourmet is my absolute fav hot sauce company, and makes my fav red habenero and chipotle sauce. Neither those, nor the Caribbean lime have sugar. I can't recall about the rest of their product's though. I do think that despite the label saying 0g carbs/tsp, they might be a little more carb heavy than some others because the ingredients are just lime juice, peppers, garlic and salt, no water or vinegar. For some reason they don't even mention this product online, but if you're in CO, USA they sell a really good habenero yellow mustard at Kroger stores.

Zulu Zulu Peri Peri is my go to for chicken if I'm not feeling chipotle.

Finally, for BBQ sauce I just recently discovered G. Hughes. I've only had the hickory, but it's pretty good. It's a little sweet and needs a spicy rub underneath it to balance that out IMO, but other than that I like it. They also make a ketchup I'd like to try.

BBQ Saucethis stuff is bloody lovely and dead easy to make only takes an hour or so.

pulled pork now i sub cider for the 1/4 cup (effin americans and thier cups) of water and add 2 tablespoons of liqued smoke for a nice off the grill hint. cut the skin off your shoulder ofc b4 you slap it in there and make crackling out of it to go in the buns too for bonus points ;)

ill not insult you by linking you a coleslaw recipe...

p.s. you may find the 'liqued smoke' hard to find, amazon has it and so do alot of tesco.. its worth the effort hunting it down though.

p.p.s. dont worry about it looking like 'there's hardly any sodding liqued in this slow cooker!' the pork will make its own.

4oz should last you a fairly long time if you're careful to be efficient with it.

Liquid smoke is "real smoke" in the sense that it is made with real smoke. It's basically made by producing smoke in a humid environment, and having it condense on a cold metal plate. The condensate is collected and bottled.

Liquid smoke gives you an alternative to using a real smoker. Ham (unless it's parma/serrano, etc) is smoked. Building a smoker is expensive and complicated in itself, so trying for a first time using liquid smoke is very convenient.

These are expensive examples. In Canada (and in the United States, I assume) you can buy it in most grocery stores, and it's less than $10.

I will be honest in that I have never used liquid smoke to simulate real smoking, but I know that some commercial producers do it, and it should work. Just be careful not to use too much - it is quite strong.

If it were me, I would acquire that prague powder, and some liquid smoke and I would give it a try :) Do some experimentation. It probably won't be exactly like a commercially produced ham - especially if you're used to American "country ham" which is much dryer.

You could try curing pork chops (kassler) or pork loin.

Personally, I like to make cured/smoked pork ribs, pastrami (beef brisket, blade, or cheek with lots of spices), cottage roll (unsmoked cured pork shoulder with cloves and extra sugar), etc.

I find it easiest to do smaller pieces of meat, and do it in a ziplock bag. That way you don't need as much water, which means you don't need to use as much prague powder or spices. You just need to turn it over every day to make sure it's getting well mixed/exposed.

Video's campy, but it still shows off the sandwich pretty well. Sliced thin, served hot. Most get them three-way, which is sauce, mayo and cheese. I go sauce and cheese. Regardless of the roast beef place north of Boston you go to, they use James River BBQ sauce. Or they aren't very good.
