Sauces, does salsa count?

Two months ago I stumbled into /r/SalsaSnobs and it was so fun and tasty that I've made it a weekly cooking adventure! Tonight I finished off an entire mason jar of homemade pineapple pear salsa, no salt no sugar just veggies and fruit and deliciousness! I've done different varieties, mango habanero is probably the best overall and most popular with the people I've shared with, but peach pear was pretty fucking great as well!

In my experimenting I also started taking unsalted roasted peanuts and cooking with garlic and chili de arbol, then blending up with white vinegar to make a thick pouring, idek, mole? Something. It's got fucking bite!

I also make guacamole at least once a week or so, just pico from tomatoes onions and jalapenos chopped up, avocado blended smooth with the juice from one lime and cumin garlic powder and paprika, then the pico folded into the blended avocado.

Hummus is great and filling as all fuck, but I try not to make it too often - less than once a month, it's a special treat. I use tahini made from just straight sesame seeds and canned chickpeas, with cumin and garlic and lemon juice, but it's so full of (healthy) fats and I'll end up eating everything I make, so have to limit myself!

I've been making my own Hummus for about a year and a half now, and I've been pretty pleased with it, it has far less oil too. I buy the ingredients online, I could get canned chickpeas locally, but couldn't get Tahini. Canned chickpeas are about 99c a can in most grocery stores if you go that route.

5lb of Organic Chickpeas $14.95 - - a whole hell of a lot of chickpeas. It lasts me ~2 months making a batch a week.

2 16 OZ jars of Tahini $10.49 which is enough for 5-6 batches of Hummus.

  • 2 cups dry chickpeas (or 2 16oz cans canned).
  • 1/2 cup to 1 cup tahini depending on taste.
  • 1/2 cup to 1 cup lemon juice
  • 1 tsp baking soda to add to water while cooking chickpeas
  • 1 tsp salt, more to taste
  • 2 cloves garlic or 1tbs prepared garlic
  • Pepper, Cumin, Parsley, to taste.

    I cook 2 cups dry chickpeas, which will fill up a 5 cup food storage container no problem, which is a LOT of hummus.

    Chickpeas are beans, so they need to soak. Soak them in water overnight, then drain, put in a pot of fresh water, add a tsp of baking soda and simmer for ~2 hours. You want to cook them until the skins are dissolved and they're really soft, which is the key to smooth hummus. Once they're done, drain them.

    Mix about 1/2 cup Tahini with 1/2 cup lemon juice (2 lemons give or take if you use fresh) and 2 cloves garlic (or about a tablespooon of chopped garlic) and put in a blender or food processor and blend for a bit. Add salt and pepper, and optionally you can add parsley and cumin and/or greek seasoning. Add the cooked and drained chickpeas and blend until smooth. Add a bit more lemon juice or water if it's too thick for you.

    More Tahini will give the hummus a deeper and richer flavor, but nutritionally Tahini is a bit like peanut butter, so the more Tahini the more calories/fat it's going to have. It's still reasonably healthy, just higher in calorie.

    Tastier than store bought Hummus and generally healthier because most store bought hummus uses some form of vegetable oil and sesame flavoring rather than actual tahini, so it has more fat in it.

  • 16 oz Mason Jar with Plastic Lid
  • Steel Cut Oats (7 oz)
  • 1 tbsp (2 rounded normal spoons) of Chia Seeds
  • Add Almond Milk to ~9 oz (more than 2 oz)
  • Mix
  • Blueberries (12+)
  • Raspberries (6+)
  • PB2 (2 tbsp)
  • Fill to rim with Greek Yogurt
  • Shake the shit out of it

    Warning: this is pretty calorie dense (~1K kcal, the oats alone are 600 kcal) but you can easily adjust it. First, remove the PB2 (45 kcal.) Then reduce the oats slightly or substitute a yogurt with less sugar, but I'd recommend just scaling everything because this mix tastes amazing and has perfect mouth feel.

Chia seeds can be pretty cheap through Amazon. I like this one for $6-7 - 2lb lasts me about a month of eating it as pudding for breakfast every morning.

Mix 3tbsp with a cup of milk (or milk substitute of your choice). Stir again after it's set up for a few minutes. I like mine with cinnamon, raisins, and a little vanilla extract.

It sounds like you've realized that your body WANTS to eat because it feels like shit, but eating won't actually help. That's the first mental hurdle. Now you've just got to switch out your go-to foods for healthier versions so that when you do give into the binge (because that happens) it won't be so bad. I lost 35 pounds by just filling up on protein and vegetables FIRST.

I have a small history with eating disorders, mainly in the fact that if I count calories, things get out of control. So I don't count anything. I also don't let myself get too hungry - I'll eat 4-5 big snacks throughout the day, no real 'sit down' meals.

I also make sure I'm drinking enough water - I bought a few of these Contigo water bottles in the 32oz size, and I try to make sure I drink one bottle each day minimum.

I love to cook, but if I cook, I can't do anything else that day, so I eat a lot of packaged food and snacks, or fresh things that just need to be washed. I also eat things with a lot of flavor and spice -- bland food makes me mentally feel like I didn't eat anything, or that I'm depriving myself.

For protein I eat a lot of EPIC meat bars and canned tuna. Instead of eggs (because shells and sinks are unnecessary steps), I make a mountain of egg whites from the carton with sharp cheddar sprinkled/melted in, then LOTS of hot sauce. Sliced deli meats are great things to have on hand -- my deli has Lebanon bologna and lemon-pepper turkey, so I get those instead of the plain stuff.

For veggies, my favorite low-effort thing is IKEA veggie meatballs. But if you don't live near an IKEA, there might be another veggie meatball option at your store. I used to hate salads, then realized I just hated iceberg and romaine lettuce. So now I eat spinach salads (with carrots and olives and roasted red peppers from the jar and sometimes cucumbers). I don't use salad dressing -- just olive oil, balsamic vinegar, and garlic salt. I'll eat green bell peppers raw, like an apple. I eat a lot of apples, too. Honeycrisp are the best.

For good carbs/starches I make beans. Just dump 'em in a bowl in the microwave. Black beans with salsa is probably the healthiest option, but I also liked mixing Great Northern beans with canned sweet peas. Any bean with butter and some kind of hot sauce or salsa is gonna taste ok and be kind of healthy. (Not refried beans, though. Save that for a treat and/or really bad day. Load it up with cheese and salsa.)

To replace chips for salt cravings, I get these salt-and-vinegar almonds. They have lactose, for whatever reason, but other than a bit of bloating the first time I had them, they haven't really bothered my lactose intolerance. And they will low-key tear up your tongue in the BEST way (if you're into that).

I don't really have a sweet tooth, but the KIND bars come in all sorts of flavors and make great snacks. For a cold treat I get the Smooze fruit ices -- they've only got 10 grams of sugar.

I also really like the Thai Kitchen Instant Noodles. They're small servings, so sometimes I'd make two for a meal. Read the packages carefully if you have allergies, though --- the Lemongrass one has shellfish byproducts, which was a very scary and upsetting surprise for me.

Another important thing is just not to have the 'bad foods' (you know the ones) in the house. My dad left a bag of regular cheddar Goldfish here yesterday, and I ate the entire damn thing, despite my gluten and lactose intolerances. So I've been miserable all night. But today I will drink my water and eat my eggs and get back on track.

I'm actually doing keto as a vegan, so I might be able to help you out some!

  • For butter, I really like either Miyoko's Cultured Butter (you can find it at Trader Joe's if you live on the West Coast) or Earth Balance, which is more readily available at major supermarket chains. I'll also use avocado or olive oil for cooking.

  • For milk, I use either Tempt Hemp Milk or, if I want a little extra protein boost, Ripple, which is made with pea protein. I buy the unsweetened original variety for both; Tempt has 1g net carb per 8 oz, Ripple has 0g net. I find the Tempt at markets like Whole Foods -- I buy my Ripple at Target.

  • I use dairy-free cheeses very sparingly because they are higher in carbs than I'd like, but I've found that Chao (available at WF/some major supermarkets) is kinda the best bet.

  • I eat mayo with most of my meals, usually either Vegenaise (I like the Pesto and Chipotle flavors) or Just Mayo. Vegenaise is another WF kinda find, but Just Mayo is really widely available (even Walmart sells it!). There's also dressings available from the same company that makes Just Mayo -- the Ranch and Caesar are both really tasty.

  • Shelled hemp seeds are fantastic, too -- one 3 tbsp serving has 170 cal - 13g fat - 0g net carbs - 10g protein. I usually mix them in with whatever I'm eating since they have a pretty neutral flavor.

An awesome chili peanut snack is these "Magic Chili and Peanuts". It's got huge rounds of dry-fried crispy chili nuggets. They're not especially spicy, but the texture and taste are awesome. Only $5 or $6/bag at 99 Ranch 99.

According to omnicalculator.com you (19F 112lbs) need to eat at least 1498 calories a day just to maintain your weight when resting. So if you're wanting to gain weight, you need to eat at least that amount.

For reference, a cup of dry quinoa becomes two cups when cooked, and is 626 calories.

Cook it in some veggie stock with seasoning, and once it's done add black beans, lentils, maybe a can of diced tomatoes, and whatever veggies you want. You can easily get 1000 calories from just that one meal.

Oh! Another high calorie whole food is tahini, which is just ground up sesame seeds and is used to make things like hummus or a bunch of wfpb sauces. It's also about 90 calories per tablespoon.

I have these chia seeds on my list! It's a 2-lb bag of black Chia seeds which are not just used for toys and gardens anymore!

I am a recent vegetarian and these things are super versatile and awesome, so the reason I want them is easy: because they taste good, they last forever, and are calorie and nutrient dense!

As far as what I plan to do with them, I will probably use them to fortify baked goods, make chia puddings, and use them in smoothies and protein shakes for a little extra boost!

I have better luck soaking them overnight, then boiling them for an hour or so, less in a pressure cooker.

Make sure you reserve some of the liquid from boiling, and add small amounts if the hummus seems too thick.

Additionally, do not forget the tahini. You may be able to find it locally cheaper, and I have heard some people have substituted peanut butter. I've never tried peanut butter, but I have made hummus without the tahini and it just doesn't taste right.

Try Chia Seeds in a glass of water. They are super filling, I have heard that they are really good for you, and they are less than 50 calories.

Mix the Chia seeds in water and let sit for 15 minutes. They turn into a thick gelatinous drink that should quiet the stomach grumbles for a while.

Also, try the Greek people method for broccoli and cauliflower. Extra virgin olive oil, squeeze of lemon juice, and a pinch of salt. For me, I also add some cinnamon, cumin, and Mrs. Dash, for the thermogenic boost.

Yeah up your fiber intake.

I make these like fruit and kale smoothies and add a bunch of chia seeds in it for breakfast. It's worked better for me than fiber pills.

It's worked way better for me than the fiber pills...plus get other things from fruits/veggies...and sometimes fills me up so I don't need lunch/lose weight.

You just throw peanuts in a crockpot with cajun or other seasoning and boil them on low for a day. I buy the stuff off amazon. You really can't fuck it up except for bringing it to work where nobody in TX has any idea what they are and are afraid of even trying them.

i've seen tahini at almost every big grocery store.

it's often found in the kosher section (where the gefilte fish, matzo, and matzo ball stuff is), which is often near the asian sections, and I've also seen it near the nut butters.

Do you like coconut? I recently bought a 4 pack of shredded UNSWEETENED coconut from amazon!~ It is amazing. There is totally no need for sweetened coconut, and all the stores around here were strictly sweetened.. UGH! You can eat it in a lot of things! I eat it mixed with natural peanut butter for a treat//fat bomb on keto. SO GOOD!

I know some do not like coconut, soo I will also suggest chia seeds. They are filling and FULL of fiber! You can add them to smoothies, drinks, liquids and they swell up and make a gooey consistency like tapioca.. Though some don't like that you can grind them up and they feel more pudding-like. (With a coffee grinder, or mortar/pestle.) I use them for chocolate pudding. Unsweetened cocoa, sugar substitute and unsweetened almond milk with some sugar substitute. It's great for a treat after a night of the seeds swelling up.

You can't go wrong with chia seeds . You may have heard of them and they generally get positive reviews for their high nutritional content but less so for their hydrophiliac properties. I would have similar problems with my long runs when I first started running - but chia seems to really moderate and control things if I take it right before I go out.

I do eat pork rinds a lot actually, they are great because they are low in calories. My other goto snack are almonds, high in fat. Also high in calories so make sure to weigh them out. I eat 2oz of almonds every day, as part of my lunch.

My favorite are blue diamond habanero bbq(not spicy despite the name), dont buy them online though..check your local store first. They are about half the price at my grocery store compared to online.

Another thing I will use as a snack are Quest Protein Bars or Costcos protein bars The costco ones are a lot cheaper but less choices. Both are keto friendly with ~5g net carbs per bar. Eating one of these with a nice big glass of water will usually keep me full for a bit.

Other than that cheeses and meats are good snacks if you like that kind of stuff.

Getting started can be hard but after a couple months everything becomes second nature. My first month was a bit rocky but I just kept reading up on /r/keto and got an idea of things to try out. Good luck!

Well, it totally depends on why you're replacing whey and what your protein requirements are. Whey has a lot more protein than hemp, pound for pound, but that's because hemp also has tons of good fats in it (with omega 3/6/9). This one is good if you're feeling adventurous again. However, it's not powder, so you'll have to blend it. Yes hemp hearts! They are no net carb, high protein and this delish nutty flavor. I dump 3Tsp (a serving) on my salads. Just as good or better then nuts. Or sometimes just a little handful on my way out the door.

(Yep, I'm good on Vit D. My doc tests it for fertility reasons and I've supplemented for years. It does make a difference for sure)

Look into KIND bars if you have them available. A few of them are Keto friendly and have the benefit of having little in the way of process crap in them.

I love making chia seed pudding the night before. It's super quick and easy. They have a nice mild nutty flavor to them. All you need are storage containers, a measuring cup, and a measuring spoon. Oh and your ingredients of course. You can also make them in mass a few nights before.

The base ingredients are 3 tbsp of chia seeds and 1/2 a cup of unsweetened almond milk. You can substitute a different low carb milk alternative or even a protein shake. I use this Costco shake when I want a more protein heavy meal. You can use protein powders if you'd like. And that's just for the base. You can add nuts, a couple berries, stevia, peanut butter, cocoa powder, etc. There are tons of recipes online on how to augment it.

Macro's for the Chia and Almond Milk base mentioned above:

Cal: 175
Fat: 11.2g
Carb: 2g net (14.2 carb - 12.2 fiber)
Prot: 5.5g

Macro's for just 3 tbsp chia seeds:

Cal:160
Fat: 10g
Carb 2g net (14 carb - 12 fiber)
Prot: 5g

You can add more liquid if you want as well, or less chia seeds. Chia seeds can absorb 9 times their weight in liquid. You can do 3 tbsp to 1 cup or more if you want. It all depends on what consistency you like. Also the longer they soak the more jelly like they turn.

And it's pretty cheap in my mind. This 2 lbs bag is only $10 on amazon. If you use 3 tbsp per meal, that's about 25 meals worth of seed. Or $0.40 per meal. You'll have to add the cost of the liquid to it as well. But there's nothing stopping you from adding water to them instead.

Here's basically how we used to make it at a place I used to work. Downscaling it and using canned beans:

3 cans of beans

1/3 cup of tahini

1/4 cup of olive oil

4 cloves of garlic

3/4 cup of the bean liquid

1/2 tsp cumin

1/2 tsp white pepper

1/2 tsp salt

~1 lemon worth of juice.

Dump everything into your food processor, and blend. I have experimented with adding citric acid to make it tastes a little more like Sabra brand. But this is at least a decent foundational hummus. This is my go-to tahini.

your diet will have more of an impact with your waistline than exercising. i use exercise to keep myself motivated to diet. i think to myself, why the hell would i want to waste all that time i just spent working out with by eating that candy bar? then i grab an apple.

Here's what I do:

  • 1 can chickpeas, drained and rinsed

  • 2-3 Tbsp chopped garlic

  • 1-2 Tbsp Tahini (bought off of Amazon, can sub peanut butter [or regular sesame seeds, but you should use a high powered blender to bake sure the bits get broken up])

  • 1-2 Tbsp lemon juice

  • Pinch of salt

  • Water to help it blend (usually people use olive oil, but this makes it lighter/cheaper)

    I usually add everything to a little bullet blender (starting with the smaller amounts). Then, I add water in small amounts and blend until the hummus is well blended. Finally, I taste it, and adjust the garlic/tahini/lemon juice/salt until it tastes how I like it. It costs a little more than $1 to make this recipe, and it yields nearly 2 cups of hummus, so it's definitely cheap!

    If you're worried about the cost of tahini, I got 32 oz for $10.50 off of Amazon, this one, which is about 31 cents per ounce (2 tablespoons). I keep mine in the fridge.

But, effort plus grinding when you can get the same (shipped to your door) at .36 an ounce of tahini premade professionally.

Hemp hearts are a great source of complete protein.

This chia, flax cocoa mix is really good with chocolate protein powder.. and chocolate pb2... and on yogurt... etc. Love this stuff. Cheaper in bulk. They used to make a berry version too but I can't find it.

Have you looked into Soylent? (Not a joke, despite the name.) It's the first 100% complete food replacement. My friend drinks this as a supplement to smaller meals to get all her required nutrition, but you can also just drink this exclusively and not eat. Crazy, right?! In smaller amounts it adds a healthy dose of all the vitamins & minerals you need to a health shake.

Spirulina powder is also really excellent for you and contains a lot of protein.

Chia seeds are so good for you and add a pleasant texture to smoothies & such!

Kale - fresh or powdered is so good for you and honestly does NOT add a nasty veggie taste to otherwise sweet drinks! Same with carrots. It can be especially good with blueberries or blackberries, and carrots are good with strawberries and apples.

A couple of things that (might) help. Daily I take a "live" probiotic which I really like. I tell my kids they are "body bugs" that live in our guts and help us digest stuff. Here is the one I take.. And, one thing that made me flow like a faucet was adding Chia seed to my morning shakes. My buddy warned me to start slow - did I listen... nope... did I feel the effects, you bet! This is the Chia that I use. When I blend it into my morning shake using a NutriBullet blender and I can't taste them at all. However, when I only use my shaker bottle to make my shake, you can definitely detect the texture - I'm OK with it, but others can't stand bits in their drink.
