From experience, I suggest cutting a memory foam mattress with an electric carving knife. Mark the longer line you wish to cut. Span the mattress between two level tables with the marked line directly above the gap between tables. Be careful to keep the knife completely vertical and work from the side where you can be closer to the cut line. Make a second pass if necessary. Repeat with the shorter length.

This is the exact one I got, from my Amazon history. I got it a few Thanksgivings ago and it's been fine the few times a year I take it out.

I kind of wish that the body was textured in some way, though. When cutting anything up, I'm always grabbing and manipulating the food, so my hands get wet/greasy and then they slide all over the body of the knife. I'd say that's my only complaint. I might DIY fix it with some puffy paint or something.
