I think your only current option is yale 5400 series knobsets, using a #482 extension to extend the existing 2-3/4 backset to 7". This may in fact be what you have, in which case you could re-use the extension and replace the knobset with one that can match a deadbolt in finish.
For online sellers of the 5407 entry sets, I'm seeing lots of levers available but only old stock of knobsets: Ebay link. I suspect you will need to special-order the 482 extension from a friendly locksmith.
If you hacked the door a bit maybe you could use large escutcheons and two of the Schlage a-series extensions to place the knob at 7.625 inches? There is someone on ebay selling a bunch of new AL53pd mislabelled as a53pd for $25 each, so if you don't mind a lever latchset in that color you could get a bargain.

It's mounted to the floor joist. I cut out a 2" hole through the drop ceiling tile. I just replaced my valvestems which are pfister brand, and I did find this on amazon, I think I'll buy one and either it will work, or I might can rig something with using parts of it and the old one.

Those female threads the seat screws into were part of the valve body. Now that they're broken, there's no replacing the seat. Time to replace the valve. You can replace the valve from the rear wall if that might be easier. Moen makes escutcheon plates that will cover your 3 holes http://www.amazon.com/Moen-1920-Remodeling-Cover-Chrome/dp/B0013C3VI2 in different styles and finishes that will match their valve trim. Smitty plates were the industry standard and serve the same function.
