The fuckwits railing against garlic presses are the same fuckwits that want us to separate eggs with our fingers. It's like if you don't make a mess out of your hands, you aren't a real chef.

The argument about "wasting garlic" also tickles me pink. A head of garlic costs what, 70 cents? And you use how many cloves a day? I cook a couple meals a day and I'm hard-pressed to use up a head of garlic before it gets too dry to work with.

I also love people who say "it takes up too much room" as if they're backpacking with the fucking things. Maybe you live in a dorm, maybe you live in a submarine, maybe you live in a Toyota Tercel. If you live anywhere else, your kitchen has at least two drawers and I'll bet your silverware fits in one of them. What fits in the other drawer? Fucking everything else. If you don't have room for a garlic press in your life, fucking move. You're a grownup, get a real kitchen.

Then there's the "it's messy to clean" argument. Grow the fuck up. You pop a clove in, squeeze the bejeesus out of it, pass a knife over it, turn on the water with one hand, rinse the knife, flip the press backwards, hook a finger into it under running water, and put it in the dish strainer. Know what else needs to be cleaned when you use it? A juicer. a can opener. A knife. A plate. It's been my experience that the people who bitch about cleaning garlic presses are the ones that pre-measure their spices into little glass dishes. Fuck off.

But really, you know what? Garlic presses are fun. The only thing that beats them are meat grinders (which also take up a lot of room and are also awesome you whiny little bitches ever made bacon sausages I rest my case bitchez). You get to use your manly gripping strength to reduce an intricate and pungent little gem of nature into mutherfucking paste. Again and again and again. It's like cracking walnuts only without the crack and with tasty tasty putanesca as the result. Yeah, I can be a bitch and get out my fiddly little knife and cut fiddly little slices of fiddly little garlic so I can toss them in fiddly little olive oil and fiddly little stir them so they don't burn, but that's what bitches do. Heat, squeeze, clean, done. Grunt grunt, oooh yeah. In the amount of time it took you to cut your garlic into slivers I've made the sauce, boiled the pasta, eaten dinner and fucked my wife. And now your fingers smell like garlic whereas mine don't 'cuz that press that's such a bitch to clean? I can do that under running water and get on with my life. You, on the other hand, are stuck with a 4" Henckels and a jeweler's loupe because you're taking cooking instructions from Goodfellas. Douche.

In their defense, most people who hate garlic presses hate them because they're used to prissy pieces of shit or semi-functional testaments to dollars over sense. A garlic press should be like a hammer - heavy, ugly and utilitarian. If you aren't comfortable driving a nail with it, don't let it near your food.

It's not in ingredients, it's the equipment. The french wardrobe of the kitchen is the battery de cuisine.

  • one good frying pan
  • one heavy saucepan
  • one dutch oven
  • one stock pot (because everyone should be making real home made stock all the time because a: they are better and b: we have got to cut down on food waste in this country)
  • a roasting pan
  • a thick handled slotted wooden spoon
  • a pair of solid tongs, a silicone scraper
  • a thick absorbent dish towel
  • a garlic press that actually works (this is the only one I've ever found that's worth spending any money on. You should not have to peel the cloves).
  • a whisk
  • a strainer
  • ONE good knife and the knowledge of how to sharpen it.

    If you're clever this should all be able to nest and should fit in maybe two boxes. I used to move every few months and this was all I had and it's really all you need. Baking is different though. Baking is what leads to a kitchen full of gadgets.

I'll throw my vote in for a sharpening stone. If he doesn't already have a nice sharpening set, maybe consider getting him something like a nice diamond sharpening stone; I've seen them for $50 or less.

Tools are always nice. Here are some suggestions to think about:
~ microplane grater
~ Japanese mandolines can be fun to have around.
~ Fish spatulas can be a handy tool.
~ Does he have a good quality peeler? Everyone has a "normal" peeler, but I like to have a good quality horizontal peeler, like one of these, to use sometimes.
~ Does he do a lot of baking? If so, maybe some silicone baking mats for his baking sheets, or maybe some parchment paper.
~ Does he like to use fresh citrus juice very much? Does he have a citrus reamer?
~ Does he like to use fresh garlic? Maybe a garlic press?
~ Silicone spatulas?
~ Does he have a pepper grinder for fresh ground pepper?
~ Does he have a set of mise en place bowls or something to use to keep his stuff organized when he's working?
~ Does he have a scale? You can find plenty of options for home-use digital scales that can weigh up to 11 or 12 pounds, and use either pounds, or grams (if he's doing anything metric.)
~ Something like a good quality cast iron pan can be a lifetime investment, because if they're well cared for, he'll be able to pass it on to his grandkids someday.
~ A dutch oven will always be useful to serious home cooks. The enameled cast iron type are very popular, but they come in many different sizes and shapes, so keep that in mind when picking one out.
~ Knives are always nice. Paring knife, utility knife, serrated slicer, etc.

Sauce recipe was adapted from here.

Recipe:

  • 1 package of Bell & Evans air chilled chicken wings (12 wings around $6). Coated in cornstarch.
  • Fry Daddy with enough fresh oil to fry in.

    Sauce:

  • 2 tbsp butter
  • 1/4 cup gochujang (link for the unfamiliar, costs about half as much at your local Asian market)
  • 1 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 tsp minced ginger (I went heavy with it and used 1 tbsp and it wasn't overly gingerly)
  • 2 tbsp honey
  • 2 tbsp rice wine or water
  • 1 tbsp rice vinegar
  • 1/2 tsp toasted sesame oil
  • 1/2 tsp red chili pepper flake

    Bring to a boil and cook for five minutes over a reduced heat.

    Cook the sauce first. I used a ginger grater and a garlic press so if you do it differently, your mileage may vary.

    Cook half the wings in a Fry Daddy or other vessel with 375F hot oil for 6 minutes. Remove to a wire rack. Wait 3 minutes for the oil to heat back up and cook the remaining half dozen. Repeat. Each batch of wings should have spent 12 minutes in hot oil. Once finished, toss with sauce.

I dont know but I had something interesting happen last November.

I had a toy sell 40+ in an afternoon, and when I raised my price to more than double the buy box, I kept selling. There were at least 10 other FBA sellers with prices less than half mine but I was getting all the sales.

My best guess is someone was drop shipping or linked directly to my listing and didnt notice until the next day.

these work shockingly well. You can put up to 5 or 6 cloves in, roll it back and forth a few times on the counter and BAM, peeled.

edit: if you regularly use garlic then this is a must have item. been using items like this for at least 25 years. don't know why they are not more popular.

I consider it one of the best purchases I've ever made for my kitchen (and it came recommended by America's Test Kitchen/Cook's Illustrated if I remember correctly!)

It's a little expensive, but damn, it works perfectly and is pretty easy to clean in my opinion. I cook with garlic MUCH more frequently after purchasing this. I like to be a purist and use a knife for things... but this was a game changer for me personally. I absolutely love it.

I use to hate garlic presses until I bought a Zyliss. I've had it for years now and use it daily. First, it has a huge hopper, I can fit 2 large or sometimes 4 medium cloves in, unpeeled and press with ease. It comes with a tool to clean the holes, but I rarely need it. If you don't peel the cloves it's easy to dig the remains out with your knife.

I would suggest buying on of these before giving up, it certainly makes dealing with garlic a lot easier.

I put garlic in just about everything, but hatted having to dice it up so I used to buy the big jars (I'm talking the 32 ouncers) of pre-diced garlec. Well, a while back, I found this thing and a garlic peeler, and I'll never buy a pre-diced jar again. With these two items, I have fresh garlic in barley a few seconds more that it would take to get the jar out of the fridge and measure it out and put the jar back in the fridge. With how cheep a bulb of garlic is, it's almost costless to add a couple of cloves to anything.

You are going to get a lot of mixed responses. By mincing by hand, you can ensure you get the desired size, but if you don't have a good enough knife or enough experience, it can take longer. Using the garlic press ensures the consistency as you said, but then you spend some time cleaning the thing and potentially wasting some.

There are good things to both methods. I use the press when I'm going quick because I don't mince garlic like a pro in the kitchen. I mince when I need a desired size, be it smaller or bigger than the press. You can use a press like this and minimize the waste because a reverse press will get the tidbits that remain.

Just do what you're comfortable with or what the recipe needs.

The Zyliss jumbo press has a little cleaner which clips into the the handle and lets you clean the entire press in about two seconds under running water. It's excellent, I love mine.

On top of this, you don't have to peel the cloves before putting them in the press, just put them in vertically and the skin will be left behind. This alone saves me far more time than I'd ever lose from cleaning the press. With the cleaning piece though, there's no effort.

I also own a microplane and love it, but it's far less efficient than the press.

Do you have a garlic press? It's a game changer. I generally don't go for unitaskers in the kitchen, but I also hated mashing/cutting garlic. I have this oxo brand one and I use it allll the time. I don't even peel the cloves - just separate them and it's super easy to use and clean too. Worth the $15 investment, to me anyway!

This is the best garlic press on the market.

A lot of home cooks that think they know what they are doing will tell you to use the knife method all the time. (These are the same people that will tell you to always use fresh tomatoes for everything.) The reality is that garlic presses still have their place. Each method provides a different texture. A good press is also much easier and faster to clean than a knife and cutting board and is invaluable if you need to produce a large quantity. That said, it is a niche tool and you can probably do without it.

I use an Oxo Garlic Press and while I do find I get more yield from mincing it manually, as I still do on occasion, I can stick the whole clove in there, press it right into the pan, clean out the husk and rinse it off (although it is dishwasher safe). The press is nice too when you have multiple little cloves that are just too small sometimes to mince, I'll stick 3 of them in the press at a time.

Also, sometimes, when I get home from work and want to get dinner on the table sooner than later, it's tiny shortcuts that help. I am completely unwilling to buy pre-minced garlic in a jar.

I tend to buy stuff based on Amazon reviews. I'm not looking for the most expensive kitchen gadgets, but I want something decent (so I won't be buying it at wal mart).

That being said, one of the things I use most in my kitchen is a cutting board. I cut everything ahead of time, and I got tired of having to pull out 3 or 4 small cutting boards, so I bought one bit 15"x20" cutting board from Sams Club. It was like $10 or so, but unlike any of the other boards I've used, it hasn't stained or warped at all, nor has it been scratched up nearly as much as my other boards.

Not to criticize /u/OliverBabish (of whom I am a gigantic fan/evangelist) but don't get that garlic press. If you're gonna get a garlic masher, get one that is easier to clean than the "bucket masher" one he got--digging around in the holes to try to get all the garlic skin out is a stupid waste of time. The best that I've tried are the ones that have a pressing plate that lifts out and can be scraped on both sides (like this guy or it's fancier all-steel older brother).

I have (and love) the stupidly expensive 'older brother' press but it was even more expensive because of all the other shitty garlic presses I bought previously. Buy once, cry once, I always say.

Thanks, good addition. I have a mandolin and when I'm doing certain things (e.g. french onion soup) I'll get it out. I should use it more often.

I have the Kuhn Rikon Epicurean Garlic Press (I think from Cooks Illustrated's suggestion?) and it works for me. The press plane flips out and it's almost trivial to clean.

The zoom does nothing. I have something similar to this that I really like, or use my food processor if doing more than a few cloves.

I saw a great peeling technique on here the other day. Crush a head with your hand/knife then put inside an aluminum bowl with another bowl to seal it off and shake for 10+ seconds. The cloves come out mostly peeled. And it is kind of fun to do :)

I'm with you on this one. While most people say a mince is fine I greatly prefer garlic presses. When you press garlic it just melts into the dish and you get that great garlic flavor without any garlic bits. No matter how tiny I mince I still find little bits which is annoying to me. Between my mother and I we have tried a lot of garlic presses and we have both found that this one is perfect. We had an oxo one recently that was nice but the garlic ran up the sides.

Garlic is pretty powerful. So once you prep it, you can rub it onto the chicken or just throw crushed garlic into the pan you're frying/baking the chicken in.

If you want to buy a kitchen gadget, they have garlic presses example but you don't really need one unless you plan to cook frequently with garlic.

You can also buy minced garlic and pre-peeled garlic at your local Asian grocery store.

Zyliss Garlic Presses are nice.

I got a Rosle as a gift from a friend and love it more than the Zyliss. Cleaning it is super easy!

I also peel all my garlic before pressing (as I scrape the remains into the pan most of the time) and I feel the "Self-peeling" ones (like my wife's Pampered Chief one) waste so much garlic.

Getting a garlic press was a total game changer for me. I kind of hate the idea of specialized kitchen gadgets, but it's just so much easier.

This seems kind of gimmicky (and expensive! I remember getting it on amazon for about half the price), but it's excellent for mincing garlic. You just peel, throw your cloves in there, "drive it" for about 20 seconds, BOOM, perfectly minced garlic. It's super easy to clean too, just a quick rinse.

Coming from someone who has broken a few garlic presses, get a rocking garlic press, not a squeezing one. No matter how heavy duty of one I would get, the pressing part that goes inside the box would also bend. I've never had any issues with my rocking one. It is slightly less convenient, but it evens out because I'm not buying a new one once a year.

You can't beat cutting up your own garlic. That said, I'm a parent now so I generally reserve that kind of effort for a fancy dinner for the wife. Everyday use, I fall back on the bajoon (I claim rights to this word) of garlic.

Onions are fucking easy to cut up quick though. Peel it, cut it in half (top to bottom). Then take a half, and cut it along the lines (the ridges that go top to bottom on the onion. It's a built in "cut here" guide. That's how you julienne that shit. Then if you want small pieces, you just go one step further by turning the onion-half 90-degrees and cut perpendicular.

Final tip on garlic. Get a garlic smasher. It helps speed things up a little.
Just peel the garlic, stick the clove in there and SMASH. No cutting or mincing necessary. Also, look at shallots if you want to up your onion game. Less to cut up, big flavor.

I have tried a few of them. Agreed most suck. I bought it off Amazon for $22.99 about a year ago. In the review video, they said the price was $35.99. It looks like the price has been up since last August

Maybe Kuhn Rikon jacked up the price due to the good reviews, or perhaps there is just less discounting because it has become popular.

I totally agree that it is pricey, but I will say that it is really well built, and works great. I am glad I didn't pay $45 for it though.

Chef'nGarlic Chopper. They make large and small ones.Tap it gently over your bowl/pan after rolling it over the counter...take it apart, then throw in the dishwasher. I also use a garlic press for smaller amounts of garlic.
