For Hasenpfeffer I found to recipes that are comparable to the German ones
Some recipes add some ginger bread and I found multiple recipes with and without bacon. I would use the sauce step from the Chefs-table recipe and not the other one.
You can serve it with potato dumplings (Kartoffelklöße) or Spätzle and cranberries or applesauce.

My German host mom gave me the Dr. Oetker Schulkochbuch as an Easter gift almost 20 years ago. It's all in German, but there are awesome photos for each recipe showing you what to.
