Im a battle rifle kind of guy. This is my first scoped rifle. It is 1/8 twist. Any recommendations on practice ammo as well as defensive ammo that will propel this rifle to its full potential of accuracy/range?
For stocks, if you want a more traditional looking rifle the Hogue Rubber Over Molded Stock is a very popular stock.
For a more tactical stock the TAPCO Intrafuse T6 is another popular stock, but be aware there are two versions of the stock. One for standard diameter barrels and one for bull barrels. Another tactical stock similar to the first one but with a better pistol grip is the ATI strike force taclite stock.
A popular newer stock is magpul's Hunter X-22 stock
For websites I would say Amazon, ebay, midway and the manufacturers site for some after market parts like bolts.
This may help you a bit, here is a run down of my build:

Then for the odds and ends:
Bolt buffer pin is made by kidd, the two pins that hold the trigger assembly to the receiver are standard Ruger parts, the barrel V-block is made by tactical solutions and the take down and barrel retainer screws are made buy Volquartsen.
in regards to the stock, you'll probably like one that's closer to 12 inches LOP rather than the 14 inches it comes with. You might be interested in getting one of these:

Take the gun apart, I'm not gonna bother telling you how since there's a ton of youtube videos on it. Spray break-free on the parts clean it dry it and grease it standard stuff people will tell you. I'd also suggest taking apart the trigger clean the cosmoline off and oil it up, the trigger will feel much better after.
Now that stock? Throw it in a tin trashcan and throw that sucker outside to sit in the sun, wipe the cosmoline that seeps out and that'll help remove that old gun smell. Now the sling rings? Yeah those, they're not bronze buddy clean those too for the hell of it.
I'm with everyone else on the "no mods" train, but if you wanna sportorize your mosin the mods I'd suggest to keep shit cheap is a Monte Carlo stock and maybe the UGT Rails if you wanna add a scope without needing clamps. If you wanna keep stuff vanilla and still get a nice upgrade for cheap I'd probably suggest a Smith-Sight, easier to adjust than the original and doesn't make your rifle look tacticool.
If you're not a strong soviet soldier and are a weak fat capitalist pig from eating cheeseburger and forcing your peasantry to do all hard work, there are two options for a butt pad. the cheaper hard rubber pad which doesn't do much for recoil but helps for extending your mosin if you got long arms, or the cabelas pad which you can use on multiple rifles and does help with recoil imo while also extending the butt.
Also if you need ammo, go here SGAmmo has some of the best bulk prices+shipping I've found for 7.62x54r also some good guys in terms of service and speed. If you do buy surplus buy a bottle of windex and spray the barrel and chamber after shooting to prevent corrosion from the ammo primer, hoppe's and most gun oils far as I know will not remove or deactivate the salts.

It looks like OP bought a new handguard which won't have the stud on the front. Something like this should do.
If OP wants a quick detach sling I think they'll need to buy the spare MI sells for the PCC

Unless you're wanting the barrel to be pink too, in which case duracoat would be best.
6'2" phatty here: I bought a 10/22 with a Hogue over-molded stock for just this reason. Regular 10/22's I feel a little 'scrunched in', but the stock fits me well and is quite comfortable.
