I was at the ginormous coffee machine, punching buttons for a black coffee, like a good ketoer, when one of the salesmen (car dealership) walked over and said "You know, the mochas are really good!" Ugh. I know!!! I hate him!!! If they ever succeed in talking me into a new car, it will NOT be from him!

Car was done early so I left right as my fast ended at noon. Started feeling a little out of it and my eyesight got blurry. Hypoglycemic symptoms, according to a quick google search. Think its time for some blood tests and maybe adjust Metformin dosage (T2D). Didn't think this would happen so soon! I barely remember what hypoglycemia feels like!

Didn't feel like walking to the cafe across the street for a bunless burger. Ate the meat stick in my purse then took myself out to Taco Bell. Had a chicken + extra chicken power bowl. It's much better than the steak. No beans, no rice, extra guacamole. So dirty! So good!

I order my groceries through FreshDirect so technically I get 90% of my stuff online :).

  1. Japanese Mayo to make the spicy mayo that you get at sushi restaurants (just mix in Siracha).

  2. Emergen-C Electro Mix for my electrolytes kick.

I've actually made bacon jerky. It was made with extra thick cut bacon. I don't think it would last as long as regular jerky, but it's gone so fast that it doesn't really matter.

Edit: Also this stuff is pretty decent.

For anyone in the keto-friendly jerky market, I'll add I'm a rabid fan of People's Choice Beef Jerky.

Several of their kinds are sugar-free (Old Fashioned Peppered, Old Fashioned Hot & Spicy, and Carne Seca Limon con Chile) and keto friendly with minimal ingredients. For example, the Old Fashioned Peppered is "Ingredients: Beef, Water, Seasoning (Sea Salt, Spices, Garlic)."

I LOATHE all commercial beef jerky, but this stuff is insanely good. I've introduced a couple people to it, who were skeptical due to their own dislike of commercial beef jerky, and now they're requesting it constantly.

It looks like cheapest option for 16 oz of the Cattaneo Brothers is $29 before shipping. (The thin-cut and cowboy cut seem significantly more expensive). People's Choice is 16 oz for $27 including shipping for one-time purchases, but you can get People's Choice as low as like $25-ish if you set up a recurring order which... uh... I admit I might do because I am crazy-in-love with it.

(SIDE NOTE: You can also get People's Choice on Amazon, but you'll pay $2 more, so it's $29 including shipping there, but Amazon is convenient for many people and I often buy it there because I have a giftcard balance on Amazon so it's FREE MEAT OMG.)

the stick ones are easy with a jerky gun. I avoided one for the first two-three years of making jerky because I thought it was dumb, but I finally bit the bullet and wish I had gotten one sooner.

I either buy really lean ground beef or grind it my self, mix it together with the flavor with a paddle attachment of my stand mixer and then load the tubes. Dries in about 5 hours for me.

People’s choice! They have carb free beef jerky. I should caveat that the ingredients include herbs and garlic, so it’s not truly carb free but it’s better than any other jerky I’ve found. A little pricey for me to keep it as a staple, but it’s great for hiking or traveling.

I don't know any recipes, but I buy Louisville Vegan Jerky and it is delicious and addictive. I get it on Amazon sometimes and they have all kinds of flavors. I definitely recommend it!

There is a little blurb on the bag that basically says it's created out of soy protein (not sure what kind) that was flavored and overcooked by accident, and that's how the jerky is made.

These help! For some reason the 100 cal packs are $40 on Amazon, but if you figure how many nuts you get in 17.5g it's about 5 carbs. Not a bad amount, and you can avoid the potential disasters that sugar alcohols may cause! These are great too. Some other good travel options are Bone Broth Packets, green olive snack packs, and meat sticks! Of course quest bars are always easy to find! But they're $6 at the airport. I also carry some nuun tablets with me because I'm always stressed and not drinking enough when traveling! But have fun! You got this in the bag!

I should add a little background:

The steaks are vacuum sealed with special bags that enables the dry-aging process with use of a frost-free modern refrigerator. The bags are basically a “membrane” to let moisture out, but moisture cannot creep in.

Well, I love bacon with an undying passion, but at least I try to get creative with it sometimes :)

Typical breakfasts: leftovers, if there are no leftovers then cook bacon, if no time for cooking then see snack section

Smoothie which also makes a good breakfast: 1/2 avocado + 1 cup almond milk + 1 cup spinach/mild greens + handful of ice cubes + stevia to sweeten + whatever you want to flavor it with (vanilla, cinnamon, etc) ===> blend hardcore

Typical lunch (at the salad bar in the cafeteria at work): DIY guacamole by mashing an avocado and sprinkling in salt, serve over various salady things such as lettuce, cucumber, pile of olives, etc.

Typical dinners: fatty cut of meat such as ribeye, or fatty ground meat if I'm lazy, with some greens sauteed in my accumulated bacon grease, and crumbled bacon sprinkled in

Morning and/or afternoon and/or evening tea: make 2/3 cup of herbal tea and fill the rest with almond milk

Snacks I always keep on hand: canned olives, macadamia nuts, celery sticks+almond butter or guacamole, salami or sausages such as these "snack sticks", more bacon

Typical (only) dessert: coconut milk ice cream, made by pouring a can of coconut milk and a few drops of stevia into my magical ice cream maker. Have not tried it with bacon yet but that's always a possibility

Look for traditional hard smoked jerky, not the new "wet" jerky and you'll find few carbs (generally 1 or less per serving, 6 or less per *pound*)

(Wild Bills, Buffalo Bills, most home made jerky, etc)

Most traditional jerky's also keep better than wet jerky when it's really sweltering out... and are usually vacuum packed by default. They can also substitute for meat in a soup pretty easily if you soak em a bit... add some of dried veggies, lentils, and it's not bad. Nice change.

For dry aging I suggest the biggest whole loin you can buy.
I've found 20-35 days works best for most cuts but every cut is different so do your research. (35 for ribloin works great). Also don't throw away the trimmings. Grind the trimmings up and mix them with hamburger meat. You'll love it trust me

number 1 staple for me, I won't buy any though only homemade, cheaper, and you know what's in it.

I use this jerky gun to make 10 lb batches from lean ground beef, either 93/7 or 94/6 grass fed beef.

Put all the beef in a large ass bowl, mix in braggs amino's or soy sauce, hot sauce, whatever seasoning you want and dehydrate and freeze.

I eat a couple ounces every night with some kind of low/no carb dip or cheese.

You should get you some dry age bags, age the steaks for 1 month, then sous vide and reverse sear them. Takes $10 a pound steak to $40 a pound or more steak. Easy peasy, buy bag , vacuum seal them in bag, put in fridge between 33-39f and wait. Actually, waiting the 27 days is the hardest part.

Buying pepperoni can be tricky. Normally we'll just grab whatever pack is at the grocery market. Luckily for me I have an Italian market near me and they make their own pepperoni. Cacao nibs, almond flour, and Planters Pistachio mix (Almonds, cashews, and pistachios), though I'm still working on the frequency. I wish the electrolyte capsules I use were eligible for Subscribe and save, but I haven't found any that are. If you use any sweeteners like Swerve, Truvia, or plain erythritol, stevia, or xylitol you could probably find those for subscription. Also some folks like the Quest bars.

Hmmm this is hard since I kind of eyeball it usually but I'll try to give it to you.

I use:

2 of these sausages which can be found sold as one pack for like 4 bucks at the closest Asian/International market.

3-4 spring onions

3 eggs

I'm having a hard time finding the soy sauce I use and I can only describe the bottle as best as I can since I'm not at home. It's a square bottle with a green and yellow label, but season the rice to taste with however much of your favorite soy sauce.

~3 cups of rice (your preference) (always use kind of dry old rice, never new rice, it's too soggy if you use new rice and doesn't separate when you fry it.)

~4 bacon strips of your preference to flavor.

Cooking oil.





Directions:

  1. Cut sausages in half going down the middle long ways so you'll have two semi-circles and then I cut into desired length, maybe half a centimeter lengths. Producing half centimeter semi-circle sausage bites.

  2. Beat eggs and heat up skillet.

  3. When pan is nice and toasty make your bacon strips or you can cut bacon into slices and put them in there, then proceed to let bacon sit and oil drip away.

  4. Pour out majority of the bacon grease and use it to cook the sausage bites until a little crispy and set it with the bacon.

  5. Cut spring onions into desired size, mines were about half a centimeter still, and heat the pan again.

  6. When pan is hot and you make your scrambled eggs and try to brown the outside of the scrambled egg, put it on a cutting board and cut to desired egg bite sizes, mines is normally about thumb sized or smaller so you can taste the egg when you eat it.

  7. A little cooking oil in a hot pan and put your rice, and brown the rice with soy sauce.

  8. Add the other ingredients (eggs, bacon bits, spring onions, sausage) and mix together.

  9. Add more soy sauce to taste if you would like.

  10. Enjoy

if your going to make a lot of ground turkey I really advise you pick up a jerky gun. Will make your life a lot easier from my experience. I use thisbut its a bit pricey (bought it to last).

As far as advice from my experience don't go to fatty on the ground beef... I stick to the 90/10 or above.
