I use a super cheap tension curtain rod that adjusts to fit any space anywhere- like this.
I set it up high between a bookcase and a wall where cats can't get to it- it stores anywhere when not in use.

If it is between cupboards, then an adjustable short curtain rod and something small might work best. Something like this.. A quick search found some as small as 16 inches.

Can you remove them all together or to be able to install curtain rods? If not, you could always buy short tension rods (like this) to hang curtains from behind the valence.

Tarps! If you're going to be in a hot area, you'll quickly find which areas of your RV will heat up the most. If you put tarps in strategic places around the outside of your RV, you can create shade and prevent it from heating up, which means not having to run the AC all the time.
If you can afford it, get a dehumidifier machine and put it in a dedicated spot! I live in a stationary 5th wheel and it gets super humid in here sometimes. If not, they sell these damp rid buckets that you can use for a while before you need to replace 'em--they work pretty well for the most part, but I think a dehumidifier would work best.
You may want to replace the locks on all your storage bay thingies (the ones that open from the outside), those use a stock key most people who own rvs have. To save on propane, you can get a little toaster oven with two burners! or just some standalone hotplates!
Make sure your toilet paper is septic safe (doesn't have to be RV specific! I use Charmin or the walmart version) and that you keep your black water tank

These kind of tension rods can be used for anything from storing pot and pan lids, to making a little makeshift towel rod in the bathroom or shower.
I recommend finding a good but decently large dish rack to dry dishes on that fits near your sink. I had a hard time finding one that fit so I got two small ones instead! They both sit in both/either sides of my kitchen sink so when I'm done with dishes, they actually don't take up counter space.

I'd get a matching wooden square tray to group your bottles in. This would tie your coffee table and console nicely.

There's a lot of art in your place; I'd go with white or beige. Ditto for a room divider instead. I like that up-light affect behind the sofa; think it'd look cool with two lights (led) behind a translucent divide. Maybe have them plugged into a power strip on the living room side, so you just flip the switch.

Maybe by the plant beside the couch. Also, I think the reading chair needs a floor lamp.
 
There's something I would do that might sound odd. The far wall is a focal point, and it's kind of busy / cluttered feeling. I would take some fabric (a cut bed sheet would do) and tack it on the top underside of your table. This would hide the stools beneath it, making it a solid block in the corner; break up the flow of frenzy on that wall. I'd put a table lamp on the table for ambient lighting.
 
Here's a couple crazy things I'd do. I'd get some Krylon Fusion spray paint and paint the legs of that little side table reddish brown. Then I'd use it as a plant stand on the other side of the sofa, with the woven basket beneath it. Then I'd get a wooden side table or nightstand- anything with distressed wood like the coffee table. I'd put a coat of gloss black paint just on top, tying it in. I'd also put a thin floor lamp behind it, for reading on the couch. If I was ambitious, I'd hang a cool paper pendant light in the corner- but not that ambitious.

Sensors don't have to be up high and looking down, it's just better cause it gets them out of the way for installations you leave in place and slightly less prone to occlusion. You can put the one that would be in the middle of the room just on the floor or on a table and angle it accordingly, though you might have to do the sensor setup proceedure to use it each time.
You can use poles like these or simple tripods anywhere in your room (some people use them just to keep from putting screws in the walls) to create a temporary place to mount them and route the cables.

DP to HDMI should work fine for the TV. I love my Vive Link Box for a similar purpose (frees up my only hdmi for my projector in my case), which makes the cabling for extending the headset easy because it's not finicky about brands/models, but for just running your TV probably any ole dp>hdmi will work.

You can buy doors for these Billy Bookcases though: https://www.ikea.com/au/en/catalog/products/S09184486/ These are glass, so not too sure how they'd go if in direct sunlight if better or worse, but would be good for dust.
Alternatively, if you want to keep it completely away from sunlight, add a curtain rod. These would do the job fine and you can throw a blackout curtain over it. No additional screwing necessary - only downside is that you the curtain may brush against the manga if you store them at the shelf edge like I do. Otherwise you could also add a bracket on the sides and drop a curtain rod in, so it's spaced away from the shelf. Heaps of options :)
Over time (several years), most pages will yellow, but you can reduce it by keeping it out of direct sunlight.
As well as the fantastic suggestions already in the comments (canvas/plastic buckets are a godsend!), you could also try short curtains etc. to hide the entire space at the top of the cupboards, like this. If you use cheap extendable tension rods like these it wouldn't take any DIY at all!

my favorite thing, a laminator! I laminate EVERYTHING...charts, nametags, word wall words, game boards, anything. I also wanted to add...since I have primary, I wanted to make them "spots" to sit on for carpet time. A carpet wasn't provided to me (you know, the Lakeshore one with colored squares), so I went cheap and bought a few feet of carpet tape from sitspots.com. They have cute actual spots, too, but I was cheap and bought the tape, cut it into 3x3" squares, and slapped those on the classroom carpet. They're holding up great (I'll be able to reuse them next year for sure) and my custodian loves them because it's not actual adhesive tape on the carpet. I just got a new student, so I had to rearrange the spots...they peel up and stick back down PERFECTLY (they're velcro). If you have the need for something like this, I HIGHLY recommend the velcro tape stuff!
OH, and when it came to book boxes and book bins, 99 cent store, dollar tree, big lots are your friends! If you have a little more cash, I got some from Target in the dollar section, too. But, they only have theirs during June I believe (they're super strong, $3 a pop but I'll be able to reuse all of mine next year).
BEST pencil sharpener around is the one from classroomfriendlysupplies.com. It is amazing. PERFECT points every time, and it even gets through those cheap novelty wrapped pencils. I love it. My kids broke the electric one I bought, so I got this one and now just use it myself, although older kids would be able to learn it (I subbed in a 3rd grade class that had one and they used it just fine with some training).
I LOVE folders for things like an unfinished work folder, homework folder, writing folder, etc. The cheapest place I found was Staples...over summer they were selling boxes of 25 for $4. I got a ton of them in different colors. Made color coding easy!
