You need more than just hydraulics but a better understanding of NFPA 13 and 13R. If you don't have a copy of NFPA 13 handbook get one ASAP.

Oklahoma state has some distance learning classes on fire protection design, but I would really order Brocks book on fire sprinkler hydraulics, most will be principals you know but it also gives some step by step direction.

I've read a bit about PEX pipe, and it's a great way for people to be able to do their own plumbing. I know very little about it, but you may want to check into it, and you can work on your own pipes.
