If you're wanting to start programming, I'd strongly recommend learning logic, design, and flow control before going after any specific language.

There's a book called Programming Logic and Design - 8th Edition that teaches about the foundation of programming. Learn that first and you can apply it to any language after that.

I'm sure if you google around you can find a free digital copy of that book (if you don't want to pay for it and you don't care about having a hard copy).

After you have that foundation, you can pick up a language like AHK pretty easy.
Python is another easy language to pick up.
Eventually, you can try your hand at compiled, lower level languages like Java, Ruby, C languages, or many others.

Hopefully you'll keep AHK around. :P

If you have an extra keyboard laying around you can try this, I bought something like this for 25 bucks https://www.amazon.com/Delux-46-Key-Gaming-Keyboard-Backlight/dp/B00QE1XH8Q

and then using this wonderful utility

to map the keys to really obscure combinations. I use the F1-F6 keys to select global pallets/functions that run scripts to change the mode the computer is in/update the remapper. Then each app I have keyboard shortcuts I want to use or functions/scripts I want it to run I have mapped to the board. It works great and runs globally in any application.

i don't have any insights into eye-tracking, but
since you mentioned that your dad is mainly showing degradation in his upper body:
