First of all, calcium is pretty hard to be deficient in if you’re really eating a whole food AIP diet. Most people get too much and even doctors (who bother to pay attention to updated evidence-based guidelines) don’t recommend calcium supplements, as they don’t help osteoporosis, unless there is evidence of a legit deficiency. If you’re getting enough vit D you’re absorbing enough calcium.
Vit D lab values should be mid point on a blood test ~50-70, with “normal” levels being between ~30-100, & any Dr that says otherwise is either lazy or ill informed regarding pretty much all research over the last 10 years-always remember “normal” values aren’t even kind of the same as “optimal for best health/healing a broken body” levels. Fun fact: RDA for Vit D was established as amount needed to avoid rickets. Personally, I’d like to set the bar higher than non-rickets, especially considering how absolutely vital it is in terms of immune system function-regardless of calcium. But I digress...
“Vit K” is really two different things-K1 & K2 and they are not metabolically interchangeable. K1 is from mostly leafy greens and, as you alluded to, is the one that is best known for assisting with clotting. K2 is ONLY available after K1 has been converted via specialized bacteria and is used by the body (in simplified terms) to put calcium where it’s supposed to go-ie, bones rather than arteries.
Most humans aren’t able to convert K1 to K2 on their own in their own guts (even “healthy” adult guts, as demonstrated in research) and thus almost all K2 is gained through fermented foods like aged cheeses, sauerkraut, etc. One of the many reasons ALL traditional cultures ate fermented foods in one way or another & had great teeth!
Best food source of K2 anywhere is Natto, which is a fermented soy bean & used as a condiment in Asia. As with many Asian flavors/foods, it has a pungent “acquired” taste to it that even most “I love Asian food!” folks can’t bring themselves to gag down. Not only that, but on an AIP diet you’d have to weigh pros of a small exposure to a traditionally prepared soy product vs. just getting it through other types of fermented foods or even a K2 supplement (many D3 supplements now come as a D3/K2 combo formula).
In any case, though I understand your caution regarding Vit K-as blood clots are frequently deadly-the functional difference between K1 & K2 is the reason that your doctor hasn’t warned you off of pickles & aged cheese, like he has with too much spinach and salads, in fear of too much K2 ingestion.
I’d worry less about calcium than I would magnesium. Post is already long enough so I’ll let you research that on your own. if you are looking to spend some money to make life a little easier, grab an instant pot! there are quite a few AIP recipes where you basically just dump everything inside and set it to cook. there is also an older model without the yogurt function that's $90 (i keep telling myself i'm going to make my own coconut yogurt but it has yet to happen, lol).

I have bad constipation too, and if I take 2.5 - 3 teaspoons in 8oz of water 2x a day it helps. Added bonus is it tastes great and you’re getting magnesium.
I also find eating cooked spinach regularly helps loosen stool.
I never eliminated them to be honest. My doctor didn't tell me to go AIP she told me to eliminate dairy, grains, and eggs. She said to eat mostly only fruits, veg, meat and fish. My diet is just very similar to AIP. I began losing my hair while I was hospitalized for 6 months after a bowel surgery gone wrong (ulcerative colitis). My hair loss was clearly a nutrition issue, yours may not be. But I had success with getting it to regrow after I started taking a multivitamin with biotin in it.
Now about 1/3 of my hair is shoulder length and all the new growth is about 7.6 centimeters. I look a little bit like Sideshow Bob when I get out of the shower.

Some probiotics have PRE-biotics in them (bacteria food) and can feed the good bacteria (and yeast) in the probiotics or the bad bacteria (and yeast) possibly already in your gut. There are different types of pre-biotics, some that are more likely to be fermented (form gas) than others and some that are more likely to feed the good guys or the bad guys.
I've been sensitive to pre-biotics for awhile now, but recently found the probiotic Seed to actually have non-fermentable pre-biotics and I don't get any reaction from them, while still feeding the good bacteria.
So pay attention to the type of probiotics your taking and also the type of prebiotics in there. And you can find some without any prebiotics as well.

Saccharomyces Boulardii (good yeast)
A blend of hearty spore-forming beneficial bacteria
Powders & capsules of more traditional prebiotics (Bifidobacterium and Lactobacillus species)
I forgot a couple of things I was going to say in my extremely long comment...
As far as the ingredients, the main ones you need are produce and meat. The others (flours, coconut milk, etc.) you can order online and have delivered if you feel strongly that you need them. I would suggest not getting a whole lot of those to start out, I didn’t tolerate them well until about 6 months in, and I can only have AIP baked goods in limited quantities now after about 15 months strict AIP.
As far as lunches on the road, I had a similar issue, and I would suggest something like this portable heated lunch box. With this one you can either plug it into the wall or 12V outlet in the car. Pack It frozen lunch boxes are fantastic for keeping your food at a safe temperature until lunch time without a lot of extra work.

I bought The Autoimmune Paleo Cookbook, and found it a helpful introduction. One thing I dislike about is it that it tries to give a 4 week plan, but the recipes aren't made for all seasons. For example, there are some soups I know I won't try for a while. Also, some of the recipes look really good but contain hard to find ingredients (none of my local CA grocery stores carry blood oranges). Many of the recipes are good (made the apple crumble with peaches/blackberries and it was to die for!) but sometimes the obvious substitute recipes fall flat (I'm sorry, but you can't have "garlic mayo" with that much coconut. It just doesn't work). I would buy it again - it was just so helpful getting started.
I also recently bought He Won't Know It's Paleo which is actually an AIP book as well. I haven't had this one as long, but I've mostly tried the baking recipes. If you're looking for an AIP substitute that people won't know is AIP, look elsewhere. But damn, after not eating real brownies for a long time, the cacao brownies taste almost as good to my palate. But there in lies the danger: if you're the only one willing to eat this because of your starved palate, you may end up eating more than you intended. The best dinner recipe in this is for the lettuce wraps, which the author has posted online. I've got to try more of the recipes before giving a full review. I would prob be disappointed if I spent $30 on this one.
