You want to use vegetable tanned leather (like in the second link) but the stuff you got was super thick. You probably want something in the 5-7 oz thickness range (approx 2 mm) such as this. I don't know if it will help, but in terms of malleability, you can "case" the leather by getting it wet and letting it sit in a plastic bag for a day, and then shape it quite easily.

To attach it, you want to use Shoe Goo and follow the directions carefully. You can get it at Walgreens/Walmart/etc for a few bucks.

Bought some EVA foam paper a while ago and I used that for prototyping. Its pretty good, it holds a shape pretty well; you can even stitch and last it. Here's my prototype I made to test fitting, lasting, and upper allowance: PROTOTYPE

Any links to something like that? All I know so far is something like this:

which I think will be my next option (at 4mm thickness), but am reading reviews that it's really stiff so I'm not sure if adhesive will work.

Are you referring to something like that?

Hmm... this does look like the same backing material that is used on the replacement soles u/wanderedoff recommended on the post in r/shoemaking. Those soles do look to be suede.

The same company that sells the adhesive has whole suede sheets with the backing material already applied. This may be your best bet if you are looking to be able to cut to size instead of using the precut pieces.

A urethane casting compound would be a good choice if you are going to use your 3d printed last as a pattern to cast a more durable permanent last. Keep in mind they usually shrink 1-2% when curing.
