Congrats on the fun trip and pending proposal. I don't have any info on the DSLR, but I packed for two weeks in Amsterdam last January in this backpack.
I am a person who is ALWAYS cold, so I put a lot of thought into the clothing to take, and I was pleasantly warm enough the whole trip. I will be going for four weeks again this winter, and will be packing almost exactly the same stuff.
For clothing:
For layers:
It was a bit tight, but it all fit into my backpack (+ toiletries, electronics, water bottle, etc.)
Hope this helps, have a fun trip!
We ordered the Orange Holiday SIM from Amazon before our trip. We covered Germany, France, Switzerland, Italy, Austria, London and it worked perfectly. It's about $50, covers 30 countries, and it comes with 10GB of data. **Edit: looks like they have a promotion and it comes with 20GB data.**

It was nice to have a working phone when we hit the ground so that we didn't have to waste any time in mobile phone stores.
Orange Holiday. I used it when I went to Europe in September and it was great. Orange Holiday Europe New Package - 20GB Internet Data in 4G/LTE + 120 mn + 1000 Texts in 30 Countries in Europe https://www.amazon.com/dp/B07RXYH2NW/ref=cm_sw_r_cp_apa_i_zHY3DbZT27GVV
