Yes, soooooo convenient! You can whip up a big batch & then just freeze them (in a variety of ways). I like the vac-seal method, because they stay good for ages (no air = no freezer burn!). My vac-seal system consists of 4 parts:

  • Vacuum sealing machine (I like this one better than my previous FoodSaver!)
  • 8" bags on a roll (cut to the length you want, heat-seal one end, fill, and then vac-seal the other end)
  • Titanium scissors (took me a long time to find scissors that would cut the bags straight & easily)
  • Silpat mats (I flash-freeze raw & cooked foods on these for a couple hours, to get hard, that way when you vac-seal them, they won't squish! especially good for cookie dough balls & meats like chicken breasts!)

    That's about a $75 up-front cost, but it pays for itself in pretty short order because you don't have to waste food (stuff like chicken & steak will last a good two years in the freezer), plus you can vacuum-seal leftover food. For example, I'll make a batch of pulled pork or crack chicken in my Instant Pot, then vac-seal them into like half-pound baggies & throw them in the freezer for easy meals in the future (sandwiches, quesadillas, loaded baked potatoes, etc.). Super super nice system to have available!

Food processor! Hide that shit in everything! This is what I have to do with my SO, who claims to 'hate' all kinds of delicious foods. Like mushrooms for instance, but she sure loved those mushroom raviolis I made. Ate the whole plate before I told her it was mushrooms, ricotta, parmesan and garlic. I found a cheap one that's small and easy to store. It's handheld and comes with 2 bowls with lids, so you can store unused portions in the fridge. Mine is similar to this one:

It’s inspired by a recipe in this book but in my profile it should show I have posted my personal changes to the recipe before here. I canned this batch but I have made it as a fridge pickle also. PM me if you can’t find the recipe and I’ll send it to you.
