Most of the Hori pads like the fighting commander(PS4-PC or Xbox-PC).
If you want to be compatible with Switch I would say the Pokken Tournament Controller they did(The one I currently use and like a lot) or the 8bitdo SN30 Pro USB( https://www.amazon.com/dp/B07R481CVY )
The only way to avoid a controller is to pick up a PS4 Dongle which is like 10 bucks. But for the most part, I strictly use my F500 for PC only. Decided to grab a HORI pro 4 to play on consoles. The dongles plug into the controller slot and SHOULD work properly. I haven't tried this yet tbh

The sooner you get into the game, the sooner you can learn it and figure out of you actually like it. It's probably cheaper now than it will be when UNICLR comes out, and the game will change, but not so drastically that your time in UNIST will have been totally wasted.
As for sticks, the Hori Rap 4 Kai sounds like what you want.
