Its definitely an adjustment. I'm middle eastern and grew up eatting "healthy" but very high acid (lots of ginger, garlic, lemon, tomato, etc..) it's hard to rationalize but healthy can look very different for different people.
Incorporating nuts into your meals for a flavor and protein boost is a great option. You can make pasta as long as its whole wheat then throw in some broccoli, liquid aminos, chicken and cashews. Instant cashew chicken lo mein :)
Or I know you dont like avocado but blend one with a bunch of basil and parmesan cheese in a food processor. Add in some kale or spinach if you need to make a lot and you have quick and easy pesto! Mess with the ratios and add oat milk to make a light, no cream alfredo sauce.
The book had a lot of recipes you can play with and tailor to fit your budge and taste. There are also several great threads here if you search for GERD recipes.
So, I myself have recently had issues with Acid reflux.
I was under a lot of stress about three months ago, which is when my symptoms began to manifest.

I take two or four, depending on the severity of reflux, about half an hour before every meal, and I can say that it manages to treat, abate my symptoms.
I'm not saying this will cure him, i'm just telling you what is working for me, a stranger on the internet.

I want you to eat more celery. And more beets. And Turkey. And fish.
They contain Nitrates. Which can help reduce chest pain, and help to determine if you have an illness that is aided with nitrates. You've got about 12 hours before the cycle starts again. Definitely eat some celery, beets, turkey, fish, that kind of stuff.
You need to stop smoking. I know, smoking is awesome. But the return on investment is terrible.
Stay away from the red sauce. It's not worth it.

Those are the ones I took, but I didn't take them very regularly. I'm no longer sure how effective they were.
Falim is the most commonly recommended brand. It tastes better and has a more consistent texture than some of the raw tears I tried before.
I'm hesitant to use gum regularly though after asking my dentist about it. She advised against frequent gum chewing to avoid TMJ issues. That said, when I was chewing, I did notice some improvement with reflux, so it might be worth it if nothing else helps.
