Yes, she actually was. There is another book by the author called "Eragon's Guide to Alagaesia." The cover shows her flying and there are plenty of pictures of her inside the book. And not to long ago there was even a coloring book that was released. My proof is below.

Sorry I didn't get to this last night, but maybe it's this? I was originally thinking of the Dragonology book too, but I see you said it wasn't that. There's also this pop-up book about dragons and monsters. That's all I really see at the moment but if you can tell me more about the book I'll look around some more.
