I have read the Luck book (the one you've been recommended) and a book by Handy calledEvent-related potentials: A methods handbook. I thought the Handy book nicely complemented the Luck book. An introduction to the Event-Related Potential Technique is much more digestible for complete beginners; the other one has more technical material.
When I started I was recommended Psychophysiological Recording but that's more general and covers ECG, respiration etc.
Possibly Rhythms of the Brain for background on frequency measures.
I'm not sure what would be good as a general EEG background. If I think of anything I'll let you know.
