I had you a very through reply, but I got an error on save and lost my mini-novel for you. I don't have it in me to rewrite the whole thing, so i'm just going to summarize; however feel free to ask specifics.

  • You need a sonos product for each area/zone you want to control interdependently. I counted 7 in your desc.
  • I would specify to have dedicated 14/4 or 12/4 ofc wire runs to a central rack/av area. I prefer those runs go to manual volume controls and then change to 14/2 or 12/2 to individual speakers.
  • I would recommend running 6 sonos connects and a 12 channel amp(with audio sense) + a sonos connect amp if your goal is only to have 7 zones. 7 Connects and (2) 8-channels amps are a close second option.
  • I think a good value/sound speakers are Speakercrafts CRS6 or CRS8's(note the zero through four's give more bells&whistles) or Polk rc80/rc60. Lots of high end options that would be better addressed in another subreddit.
  • Spotify works fine for me today, not sure what you'd be waiting for?
  • I would have an audio cable run if you do TV a/v wiring in the bedrooms to connect to the aux input on the associated sonos. It'll give you TV sound over the speakers in the bedroom which is great when you dont want to crank the volume but you still want to hear whispers.
  • Dont skimp on prewire if you think you even MIGHT want speakers in the future (mud room, garage, laundry room, office, entry, hallways, gym, etc.)

This is the switch JTech Digital HDMI 3 in 1 I have on my Sonos 5.1 setup with my 65" Samsung JS8500; it works to perfection. It does ARC perfectly when I run Netflix out of the applications SmartHub.

Also, I have a NVDIA Shield and a Blue-ray player connected as well and it process sound flawlessly.

They do have a 5 in 1 variant if you need more HDMI ports.

I know you mentioned wall mount but I had good luck mounting it to my tv mount above my tv so the controls are still exposed and the channels aren’t swapped like some others have done with this mount.

This seems to have great reviews on amazon.
According to the reviews, quite a few use it with SONOS to increase format compatibility. The 4K version is 2x the price of the 1080p version. Some TVs have an HDMI out (For Samsungs, it’s a semi-hidden Mode) so you could save and just buy the 1080p version.

Yes you need a switch or a receiver to split the audio. I have a projector too and a Sonos Beam via optical. There are probably better ones but this is what I bought last year and it works great.

Be sure that if your record player does not come preamplified, you will need a preamplifier to give it the output it needs to be at the proper line level output. I got this little guy and it works perfect from my turntable to my ZP90 that's set up to my computer's speakers!

I have a Samsung TV from 2008. I bought an HDMI audio extractor. I have linked the one I bought below. You can get this or others. The set up will be all your inputs to this device. The HDMI output goes to TV. The optical goes to the playbase. The one issue is that when you turn off the TV, you need to turn this off as well otherwise the audio continues to play.

Here's one.

It's a fairly common product that you can probably get at a hardware store locally though. Paint it the same color as the wall and it's pretty discrete.

You could also use wiremold if you only have one or two wires that need cover.

still what i said applies. make sure its 5.1 dolby and not pcm or some newer format like dolby digital. the only way to get 5.1 on sonos is using dolby .
edit as others mentioned if you're connecting the roku through hdmi to your tv and then the tv to your bar using toslink its possible that your tv doesn't transcode to dolby.

If you get an hdmi switch that splits optical you need not plug the playbar into the projector at all. I currently use one because my tv does not pass 5.1 (which is also a possibility with your projector). Plug all your sources into the switch, plug the optical out from the switch to the playbar, and the hdmi out from switch to the projector. You will just need a long hdmi cable.

Here you go. I have a Play:1 mounted above the shower in my bathroom and another Play:1 mounted in the corner of my bedroom in addition to other Sonos around my house that aren't mounted.

I used Flexson wall mounts to mount them and then Wiremold CordMate kits to run the power cables. I actually used an extension cable so that it would be long enough and then have the Sonos power cable hidden.

Because your tv only has optical audio out and the Play5 only has 3.5mm analog input you need a DAC.

I use an HDMI switch. It strips the audio from HDMI and sends it to optical while forwarding the video to HDMI out. Most receivers do this as well so it's not a surprise that most TVs don't.

You can use a speaker selector box. You would hook the the sonos amp up to the amplifier input of the speaker selector box, then hook up your living room and patio speakers to the terminals. You could then press the button to turn the zone on, or depress it to turn the zone off. This would give you the same audio in both areas, and the volume would be the same. You could find a speaker selector box with volume controls as well, though they're more expensive.

Correct. You may find better results with Optical audio compared to HDMI Arc. We've installed a few dozen sonos beams with samsung TVs using HDMI Arc and have converted them all to Optical after the fact. The TVs seemed to fight between TV speakers and HDMI Arc.

When I am outside I use a Bluetooth dongle that outputs to RCA going into my Connect AMP. I used it mostly to watch the Penguins playoff run outside on a projector last year and didn’t notice a delay as others have posted about.

No problem! It's a bit of a bummer, and I'm still not sure I really understand why there's lag from some devices but not others. With the Playbar connected to the TV there was no problem with lag from my satellite TV box, but my Xbox 360, Xbox One and PS3 all showed lag when they were set to Dolby Digital.
