honestly, you're leaving the PEX exposed, I wouldn't use a proper spout, I'd run the PEX down the wall, 90 it out from the wall, 90 it downward into the tub, and leave the cut off PEX to fill the tub. Hell, you might be able to skip the 90 down into the tub, and just have it coming out from the wall, it'll probably sag a bit, and it's not likely to overshoot the tub anyway. It's going to be tough to get any sort of spout that doesn't expect to be mounted in front of a wall that's in front of the plumbing.

I suppose another idea would be to try to find a surface mounted faucet that you can use separately from the shower faucet (T off the PEX to the shower and feed down to the second faucet) just for tub filling. I'm pretty sure I've seen utility faucets that can be fed from in front of the mounting surface, and they seem like they would go with the aesthetic you've got going there. something like this
