OK so we have similar skin types, and I've found that I can barely use a cleanser without my skin drying out in the winter. Like you, I started double-cleansing, which totally wrecked my moisture barrier.
What's saved me is using micellar water like Bioderma Sensibio/Crealine AM/PM and using the COSRX every 2-3 days at night. Micellar water has a low Ph, cleanses skin, doesn't irritate and, most importantly, doesn't dry it out!.
There are a couple other cheaper brands out there and I believe Simple and Garnier have well-reviewed cheap versions available at most US drugstores. Good luck!
