You'll probably find the Nova a bit small for serious note-taking. Look at the Boox Note Pro or even the Boox Max2 Pro if price really is no object.
They have "apps and stuff", but eink limits the appeal of the time wasters like Facebook, Instagram, or Twitter because those apps aren't designed well for eink. OTOH, being able to choose any Android productivity app more than makes up for the chance of "distractions".
