I have the basic Coleman 12 gallon and the conversion was a breeze. It's easy to remove the plastic valve that's already in there.
The Xtreme models are a little pricier but also get quite a bit larger, if you want to future proof your setup. They're also much better insulated, but the standard one holds temp well. I might lose a degree or two over an hour mash.
I believe I'm using this one, though I don't have a spigot on mine. It's like 22 x 12.5 x 12 on the inside.
I tried shoving a 6.5G carboy in. No go. A 60 quart cooler might fit it. You'd have to be careful, a lot of them aren't flat on their sides, and you'd have to watch that it didn't leak as your ice melted.

A little food safe silicone, some beverage tubing, a rubber mini keg bung, and a Bazooka screen (alternatively, a braided plumbing connection), and couple of hose clamps will transform it into an inexpensive and low maintenance mash tun.
