I tend to eat lots of different meals. I like to cook, so I'm always looking for something new.
I just got this book, called Dairy Free Ice Cream, and I'm itching to make some recipes. While it's not a perfect keto cookbook, I was flipping through it last weekend in a bookstore and saw all the recipes were made with coconut milk, alternative sweeteners, and almond and coconut flours. I knew I'd be able to tweak almost all of the recipes to fit my macros (cream instead of coconut milk for fewer carbs, Swerve instead of dates for sweetener). And I love nothing more than a mug of ice cream on Saturday and Sunday nights in the summer.
I'm also planning to make fried chicken, using pork rind crumbs as the breading. I've got a package of drumsticks in the fridge calling my name. Plus I just read sketchymurr's comment about the cavemanketo cordon bleu and my heart skipped a beat...
