Possibly, but I don't think its happened yet. And even then, no update has interrupted the Joy-con toolkits compatibility. So you could just change it back.
And as for pro controller grips, no. Right now its grey, white, green, pink and gold.
BUT.
Colorware and other controller customization sites as well as artists on Etsy do make/paint grips in basically any color you want. Although, Im sure the grips alone would probably cost as much as brand new pro controller.
