I don't know of any egg substitutes that are strictly paleo, per se, but if you're willing to bend the rules in order to make a one of the many paleo treats that calls for eggs, there are numerous store-bought egg replacements that are gluten free (though not natural). Ener-G is an example, though I've never used it personally. It seems to have good reviews on amazon.
