I take my pH post-mash in. The grains can affect the pH. Granted, this makes it hard it not impossible to use pH strips. I use a surface pH meter because it's really easy. The thing to remember with any pH meter though is to be sure it's calibrated. They go off easily compared to most other measurement devices, unless you do multiple batches a week I'd calibrate once per brew day.

Hydroponic does not exclude the use of soil as a substrate.
Costs a little more, but Extech seems to have one of the fastest response times. Easy enough to calibrate, and to do cal checks. I don't know how different that model is from this one.
Let's see...nope, we use the pH100 model, works just fine.
I've tried quite a few, the best I've found for the money is the Extech 100
If you're willing to spend some money, a meter is a lot more accurate and easier to read. Extech makes a decent entry level meter.
