While there is, truly, shame in the pancake mix game...I still LOVE:

Carbon's Pancake and Waffle flour

IF you use a mix, use Carbon's, otherwise what you see in the thread is exactly what you are looking for. I would advocate adding a bit of vanilla to your home made pancake mix though.

And whatever you do...be sure to use peanut butter on your pancakes.
