Here's my super-pro recommendation. Buy the vinyl mats, BUT THEN buy clear plastic sheets like these or these.
Now here's where you get brilliant. Put that clear plastic on your vinyl mat. Boom. Grid for your plastic. Draw your map using wet erase markers on the plastic. Remove plastic. Boom. Gone from your vinyl mat.
Now you have not only options for throw-on maps, but you can do modular addition of rooms. Every time the party opens the door to a new room you can add another plastic page with the next room.
