With eDP connecting a laptop screen to a regular PC is a little easier than it used to be but, unless you can find an adapter kit for a specific panel you want to use (not sure how common this is), it's still not super simple. Someone on hackaday made one you can order and assemble yourself for one of the apple displays.

Personally I'd be looking at something like this portable monitor which can already take a regular HDMI cable.
