Was inspired by this recipe here.

I changed it up a bit.

Ingredients

4oz (115g) Cream Cheese

4 Large Eggs

2 drops concentrated sucralose solution.

1 Tsp Vanilla Extract

4 Tbsp Coconut Flour

2 tsp Baking Powder

Bring the Cream cheese and eggs to room temperature. Sift the coconut flour and baking powder together. Whisk everything together. Larger eggs should provide good consistency, add 2-3 teaspoons water if too thick otherwise. Bring griddle surface temp up to about 375 degrees. Quickly wipe the surface of the pan with the end of a stick of butter. Use a paper towel to wipe off any excess. A well seasoned cast iron pan just needs a bit of fat to fill in the surface pores of the iron. Use a 1/4 cup ladle to portion out each pancake.

The original recipe called for a tablespoon of vanilla extract and then an additional 1/2 teaspoon of maple extract. Just way to much extract in my opinion so I pared it back to just a teaspoon of vanilla extract. And I didn't have any cinnamon so I just omitted. Since I've found out about concentrated liquid sucralose I've been using that as my go to sweetner. It tastes just like sugar and one drop equals one teaspoon of equivalent sugar. All in all was excellent. That enormous stack of pancakes lasted not even 5 minutes after I put the camera down.

I make sun tea by the pitcher and it got tiring trying to open packets of Splenda for each glass. The boxed stuff was 99% dextrose or maltodextrin. So I was happy to find this liquid 25% sucralose. One drop = one tsp sugar, so you'd use a eye dropper for coffee, but 2 tsp in a gallon of tea is just about right.

Liquid sucralose aka Splenda ftw. I dislike that cold mouth feeling the other kinds give you plus it is extremely cheap and lasts a very long time.
