There was a Legends book titled Kenobi which is exactly this - based on Tatooine not long after he first arrives after the events of RotS.
Its one of the better EU books - no super weapons, so villians, nothing silly or outrageous. A few people have called it "a Star Wars Western".
I can't speak from a ton of experience over the list of novels in the EU, but I personally enjoyed Kenobi. Fits into Ben's time on Tatooine.
Could go for the new marvel comics as well, few decent reads in the bunch.
There is actually a book already out, Star Wars - Kenobi , detailing that story although its probably not canon anymore...
And until Disney releases anything that dispute what is legends, i consider it still canon.

It's pretty much a western only with Kenobi instead of Clint Eastwood. Not a bad read, but probably a little different feel than you might be expecting.
