Recipe:
For the "rice"- full head of cauliflower riced, 2 or 3 tablespoons cream cheese, teaspoon of sesame oil and a few drops of rice vinegar (the "rice" will be tasty still without the sauces, they help though)
Chopped (into thin strands) cucumber, carrot, avocado
And sushi-grade salmon (got mine from a Kroger, in Ohio, and it was so fresh and yummy)
I also just bought and used this sushi bazooka! I usually roll my rolls manually, but this device makes extremely consistent rolls and is definitely neater and cleaner than manually building.

I also sometimes add a line or 5 or sriracha on top of the ingredients before closing the bazooka.

Can also sub out salmon for tofu, crab, whatever. I also add green or yellow pepper to my rolls sometimes, too.
