I haven't read a ton, but I always recommend Casey Taft's book - Motivational Methods for Vegan Advocacy.
It's written in such brilliantly succinct language, and provides loads of interesting psychological insights around behavioural change and habit formation. It totally changed the way I think about my own efficacy and encouraged me to stop feeling like I had a responsibility to protect non-vegans from feeling uncomfortable when discussing veganism/meat-eating. It's a short read but super-potent!
Motivational Methods for Vegan Advocacy: A Clinical Psychology Perspective is a book I would recommend. It deals precisely with what you need, and it seemed well-written to me. The points Casey Taft makes might seem evident, but I guess we all need to be told the evident from time to time. :)
