It's literally just that. Cut up through the ribs on both sides of the spine. Double bonus is now you get to use the spine to make stock. I made mine in the pressure cooker and it was amazing.
I used my regular chicken scissors this year, but they really didn't like cutting through the ribs. For a big bird, you'll want poultry shears like these or these
Hard to say exactly how that goes together, but it looks like it may be missing a part. I've had this pair for a couple of years now, and it really does the trick nicely with a minimum number of parts.
Get a pair of quality poultry shears. The bigger the shears, the less grip strength you need to make them work. And you want ones that come apart easily for cleaning.
Alternatively, get a big ass cleaver.
I used these poultry shears, which I decided upon after reading this article.
The shears have worked great for two turkeys so far this year (a test turkey last week, and the Thanksgiving turkey, which has been dry-brining since Tuesday.)
I can see using these many years into the future. The fact that they come apart for individual cleaning of each side is a bonus (though it was a pain in the ass when I opened them too wide while cutting.)

These are the best poultry shears on the market IMO.
They work great with turkey.
