Do you have any dietary restrictions or allergies?

Most of my common meals I would make during my single life started with a crockpot.

Take a big hunk of meat (like 3-6 pounds) put it into the crock pot, poke a shitload of holes in it (I used a 3 prong fork with like 6 inch prongs, and poke it around 100 times for a 4 pound beef roast evenly spread throughout the meat) surround it with roughly chopped vegetables, I typically used Celery, onions, peppers, tomatoes (depends on the recipe) and things like Zuccini or Squash as you can often find them for cheap.

For spices, go to a place like www.atlanticspice.com and buy bulk spices. They are cheaper and SOO much better quality (so you use less) than anything you'll find in either the grocery store or even at a place like BJ's or Sam's Club. For garlic I always buy the jars of minced garlic vs dried...I was too lazy then and am still too lazy to mince it myself, especially for the cheap money of already minced garlic, and I feel like minced garlic gives more flavor than dried.

Set it to start cooking at like midnight the night before. Then after you get home from work the next day it is good to go. The meat will be super tender, and the flavors from the vegetables and the spices will fully permeate the meat.

For sides, if you get a rice cooker, you can toss in something like White Quinoa and cook according to the directions. Quinoa is FAR superior to rice in terms of nutrition and its ability to keep you full due to the high protein content, plus it will keep in the fridge for a week or so in tupperware.
Remember to rinse the quinoa twice before making to get all the hulls and stuff out of it.

Alternatively, you can toss dried black beans into the crock pot with the meat and vegetables before you leave for work and stir it up (so not the night before otherwise you'll get mush) along with a 16 ounce beer for liquid. Make sure you give them 8 hours to cook, and you rinse them at least a couple times before, making sure to pull out any stones

You could use canned ones, but they are higher in salt, plus the dried ones are cheaper.


I find those meals break up nicely into Tupperware and keep well when frozen, so they're easy to reheat for a few days. I used to work in construction, so I'd take them frozen to work, and by noon they'd be pretty thawed and good to go to eat.
