You might take a look at handy cams in the HDR-CX line, particularly the HDR-CX440 which is $300, and it's cousin with a built-in projector HDR-PJ440. They do full 1080p@60FPS recording and it has a good 60x optical zoom. I have the previous generation, the CX330, which I used to record this 2-hour walking safari. The CX440 should be about the same.
Right at the $500 mark is the HDR-CX675, but it's specifications are so similar to that of the CX440 that I'm not sure it's worth the difference. If you wanted much better quality than the CX/PJ series, then look at Sony's FDR-AX series of high-end consumer camcorders and see if you can find a good bargain. You might be able to find a new, older generation mode of a camcorders on this page for $500.
Panasonic has some compelling options in the $400-500 range as well.
