This is my favorite-- Sunflower Jasmine tea.

I have tons of the empty tins sitting around my house. You can buy it in three sizes-- 120g (~1/4lb), 227g (1/2lb), and 454g (1lb). You can find it through amazon, or if you live near a Chinatown, you can find it in pretty much any grocery store. Roughly, the prize per size tin is $3-4 for the 1/4lb, $5-6 for the 1/2lb, and $10-11 for the 1lb.

Note: The tin comes in two colors, red and yellow. The yellow one is the better one. I don't know what the exact difference is, but that's the general response I got when I searched google.

People use all sorts of tea to make pearl milk tea. I believe the canonical tea is cheap Ceylon, but a lot of places use even cheaper Assam instead. Some people add a second tea, like high-mountain oolong, to add complexity. In HK, they often add ripe pu'er. I've also seen many people recommend Golden Sail lychee black tea and Sunflower jasmine green tea, which are cheap Chinese supermarket brands.

Thai tea is usually Ceylon with condensed milk, food coloring, and often star anise (and sometimes clove, cardamom, vanilla). The leading brand is Number One. That's what your favorite restaurant probably uses. Black sugar PMT was made famous by the Tiger Sugar chain. I've tried it, and tbh I prefer the cleaner flavor of sucrose- or fructose-sweetened PMT.

I don't know how to make cheese foam, but here's my recipe for Taiwanese milk tea:

In 1 c of boiled water, steep 2 teabags of Ceylon for 15 min. Add 1/8 c each sugar and creamer. Chill completely. Shake before serving to improve the texture. Serve with pearls, either the instant ones or homemade ones with tapioca starch and black/red/brown sugar.

Genmaicha seems to be a crowd-pleaser. It has an earthy, toasty taste and is easy to make properly.

Also, if you want to try some jasmine green tea and don't mind buying in bulk, I recommend this.

I like the Sunflower brand stuff that looks like this

the Jasmine and Green tea are decent quality, pretty cheap, and come in huge quantities. you will have to pick up a little tea strainer unless you don't mind snacking on some leaves

my tastes have been called 'crude' before but I'm not what you would call an aspirational beverage consumer

I've done it with gunpowder, various white teas (bai mu dan, silver needle), jasmine greens. My everyday tea is this jasmine tea from the grocery store and it works well. I put in much less leaf than I would if I were steeping with a filter.

I don't think it would work well for tiny leafed teas like sencha or genmaicha, but haven't tried it.

Edit: I thought What-Cha's Kenyan silver needle took really well to grandpa style yesterday. Basically, try it with any and all teas! Worse comes to worse, you can strain it into another cup using a fork or spoon or something.
