How is this list complete without The Little Mouse, the Red Ripe Strawberry, and the Big Hungry Bear?
That's easily one of the most beautiful children's books that has ever been published. The colored pencilwork is breathtaking.
I'd also like to add

I remember two of her other books: The Little Mouse, the Red Ripe Strawberry, and the Big Hungry Bear

Sounds like The Little Mouse, the Red Strawberry, and the Big Hungry Bear by Don and Audrey Wood. But it wasn't a series.
