Box set? It's still three disks.. but in one box!! (I can really recommend it)

However, if you really only do want one disk, you'll have to shop around a bit to find a kind of 'compilation'. Beware of some of these as some orchestras of a not-so-high standard have recorded Lord of the Rings 'highlights' that look tempting but are just rubbish. A friend of mine ended up with a pan pipe version once (which, oddly enough, actually sounded alright in the end..).

If you like soundtracks enough, eventually you'll find that you have a favorite composer. For me, I generally like anything by Howard Shore or Hans Zimmer.
