I'd also recommend When We Left Earth: The NASA Missions. It's a whole history of NASA, but obviously Apollo occupies a big part of that.
If you want to get really far into the weeds, there's a DVD box set dedicated to just the Saturn V rocket - three discs, a level of detail only an aeronautic engineer could love.

Most of the first two minutes as well as the music is from the either the movie, "For All Mankind," or "In the Shadow of the Moon." (I watched both the other night, so they're kind of running together in my head. Some of the other footage is from the the Apollo series.
