I like liquid Stevia in my coffee. Another good option is XyloSweet .

Going to ask a second question today, how many drops of the following liquid stevia would you add per gallon of cider for back-sweetening?

I have a terrible late night sweet tooth, and Ice Cream used to be my go-to treat... But I just couldn't justify the cost of Halo Top, so I got creative and I'll share my "recipe" with you!

The 4 ingredients you'll need:

  • Frozen Mixed Berries (80 calories per 3/4/ cup): I get a 3 lb bag for about $8-$10 depending on the sale
  • Liquid Stevia (0 calories): I can usually find this for $6-$7 at Trader Joe's, amazon seems expensive

  • Hershey's Sugar Free Chocolate Syrup(5 calories per TBSP): Found at my local Wal-Mart for about $2.50

  • Water: From the Tap is fine!

    To prepare a single serving:

  • Portion out a serving of frozen berries into a bowl (80 calories per 3/4 cup... even 2 servings is ok!).

  • Get between 1/4 and 1/2 cup of hot water from the tap

  • add in 15-30 drops of the Stevia (to taste depending on how sweet you want it)

  • Mix the berries and water to ensure all berries have been coated in the sweetener mix. The frozen berries will get a little coating of iced-sweetener and at this point can be eaten as is

  • If you would like to "chocolatize" your dessert, you can drizzle the Hershey's syrup on at the end and give it one more stir.

The frozen/cold of the berries and the sweet/chocolate of the sauce almost tricks my brain into thinking I'm having a huge bowl of ice cream. Best part is, I can have a taste for under 100 calories, and a heaping helping for under 300!

Hope this helps someone else as much as it has helped me!

I use Trader Joe's which looks like this but is much cheaper at the store than from Amazon.
