Just preference on what you like. I like being able to see both sides of the card so I use regular Ultra Pro penny sleeves on my cards. I've been slowly finding my old collection of Pokemon and a lot of the top loaders have yellowed some but the cards inside the sleeves are fine. Recently found out about these Pro-Fit sleeves that fit Pokemon cards perfectly and have been using these for cards that I put in binder pages.

The solid back colored sleeves to me look alright if you are playing with the cards.
I'm using the KMC Perfect Hard sleeves for my player cards and the Ultra Pro Standard Pro-fit sleeves for my encounter cards, agenda and acts decks aswell as location cards.

They are designed to fit the card snuggly, I've used these to sleeve some ex cards to keep them from warping. They are small enough though that then the cards should be able to fit in a regular sleeve.
The desiccant is a great idea. I would suggest keeping the cards in an area of the house which won't go through huge temperature swings. The warping occurs because the foil layer doesn't absorb moisture as much as the "cardboard" portion of the card.
