If you like meat, I highly recommend one of these bad boys, especially for marinating. You apply dry spices and a little olive or other oil to meats as appropriate, then give them a once-over on both sides with this and marinate for some hours or overnight depending on the recipe. The flavor goes everywhere and the resulting meat is surprisingly tasty and juicy.

Carne Asada: (Grilled Steak)

Flank steak - any size 1 cup of orange juice (I had some Clementine’s in the fridge and they worked fine!) Garlic powder to taste Salt and Pepper to taste

If you have a tenderizing tool (http://www.amazon.com/Deni-MT45-Meat-Tenderizer-Blade/dp/B002R0FRHC) give the steak a quick tenderizing.

Next, mix the orange juice, garlic, salt and pepper together and poor it onto the steak. Letting it sit for no more than 8 hours because the acid in the juice will start the cooking process. After marinating, grill steak to desired doneness. I find med, med rare to be the best for flavor.

Chimichurri (Used in South America)

For this you will need to either finely chop by hand or with food processor:

1 bunch flat leaf parsley 1/2 bunch of fresh oregano 4 cloves garlic minced 3/4 cup extra virgin olive oil 1/4 cup red wine vinegar 1 teaspoon lime juice 1 tablespoon diced red onion 1 teaspoon black pepper 1/2 teaspoon salt

I like to use this table side as a salsa, but you can also use as a marinade for steak, chicken or pork. Do not make any more than 2 hours in advance.

Serve with fried plantains, rice and beans!
