A kit like this is good: https://www.amazon.com/Yak-Gear-Deluxe-Anchor-Trolley/dp/B0097N2HNY

You can also piece them together yourself if you want. They're pretty easy to install, just follow the instructions and put in a couple screws.

THIS is a really good trolley system from everything I've heard. My uncle has this one on his. I bought an Ascend FS128T fishing kayak from Bass Pro, which came with a trolley already, but as far as aftermarket ones go, I've heard good things on this one. Whether or not it's necessary, I'd say it's MUCH more convenient, but you CAN get by without one. It just helps to position the anchor and adjust to the current and wind to keep you pointed in the desired direction a lot better without having to pull up and re-anchor as conditions/desired positions change. As for the anchor itself, they make small kayak-specific anchors, but I just use an aluminum fluke type anchor spare from my 19ft cc offshore boat and it's just as light and fits in my storage bin just fine. I fish mostly on lakes, sometimes in the flats in the gulf off FL, and I can tell you that unless you're on the calm side of the lake with no wind, you'll probably wish you had one.

$35 for the best accessory that I have put into my yak. It would cost more to make a DIY one that was decent. If you make a DIY one and fish in salt water it most likely will not last very long unless you buy all nylon and stainless steel parts.
