While they're a fantastic tool, a stand mixer is expensive. However, having a mixer on hand can be insanely useful. A decent handheld mixer can do the job for way less. Aside from that, these would be my suggestions.

1.) Knives. Get something decent and try to learn to keep them sharp. you don't need a huge knife block, 2 or 3 basics will do the trick. A small and large basic knife and a serrated knife will be plenty to start with. A set of basic cutting boards to go with these as well. Get more than one because you shouldn't cut raw meat on the same board as cooked meat or veggies and so on.

2.) Measuring tools. 1 set of measuring cups, 1 set of measuring spoons, 1 liquid measuring cup. I prefer metal for the first two and pyrex for the last. In my experience the numbers wear off the plastic ones pretty quickly and they stain. And yes you need all 3, liquids are measured differently than solids.

3.) Graduated mixing bowls. Pyrex are also great for these. I have this set and they have served me well.

4.) Pans. These really depend on what you want to do. If you want to focus more on cooking start off with a few basics. A larger stock pot, a sauce pan, one or two frying pans (i prefer to have multiple sizes) and some basic pans for the oven. A 13x9 metal or glass pan is a must have for me as well as an 8x8 or 9x9 square pan. If you want to bake as well you'll need to add cookie sheets and possibly a few more specialized items like muffin pans. Nonstick is sometimes frowned upon by chefs and cooks, but truth be told they're fine for most applications. Personally, I highly recommend against silicone pans. In my experience they smell foul and are a pain to clean.

5.) Utensils. Do not get the cheap shitty plastic set. Just don't. It's a waste of money. I cannot count how many cheap plastic spatulas I've thrown out because they melted or peeled or something. Go with silicone instead. You can use metal, but keep in mind metal tools+nonstick pans=scratched ruined pans. (This does not apply to spatulas used for things like stirring or spreading frosting btw, only to ones you will use on your stove). As for as what you'll need, I would suggest a set of wooden mixing spoons, and a set like this that includes the basic items; a normal spoon, a slotted spoon, a turner, and a pasta fork.

6.) Specialty utensils. Once again, these depend on what you want to do. Whisks are handy for a lot of things and a box grater comes in handy. A silicone pastry brush is nice for certain things and easier to clean than a normal one. A basic strainer was something I didn't realize how useful it was til I got it.

8.) Other Basics: Oven mits, towels, kitchen twine, tupperware in multiple sizes, egg separator, can/bottle opener.

9.) A basic cookbook. I'm a huge fan of this edition of the BH&G cookbook. On top of a lot of basic, fun recipes it includes a lot of extra information about tools, techniques, and some nifty tips and substitutions. I have a separate binder of my own recipes, but this is my most referenced cookbook.

What sorts of food are you hoping to learn to cook? I can expand on any of this depending on your interests.

I'm not really that sciencey about it to be honest. I just eat good natural food. I probably eat more meat than I should, but I like it.
If you're not a high level athlete I don't think getting the exact ratios of carbohydrates, fats and protein perfect is really necessary for most people.
Of course I'm just some guy on the internet. Robb Wolf's book is well worth a read as he goes into a lot of the science but still keeps it very accessible. LINK!

I'm from MA so I can't help you much, just wanted to say my wife was diagnosed with stage IIIc colon cancer one year ago next week. Cannabis helped tremendously through chemotherapy. She has lingering neuropathy still that cannabis also helps with.

One other thing to say, is that this book could have saved her life:

The book is meant to provide information to supplement your choice of treatment. I very highly recommend it. Best of luck.

In answer to your question of whether or not the diet would be worth a shot.. i would answer with "if I could go back to before I did chemotherapy, i would have done this diet instead". the reason why is a couple of different factors... well it all started when i was diagnosed with cancer and my dad started doing research as to what causes cancers. he didnt read this book, actually we just discoverd this book but ill explain how i found it in a sec. So my father was doing research and he came to the conclusion lack of nutrition is what causes cancer. TBH i was not sold on the idea at all and i chose to have chemotherapy. (i was 15 and for some reason the legalities were up to me). well i had chemo, was healed of cancer, and since then have been ok. well about a few weeks ago this woman went to have her car repaired at the body shop where my dad works. this woman was a *ahem "female priest" or something like that so you can imagine how very outgoing and talkative she was. she got talking to my dad, and crazy enough, she had hotchkins lypmphoma(or it might have ceen non-hotchkins) but nevertheless, her cancer was alot more advanced than mine was. mine was a stage 2 and hers was stage four. she had many surguries. She had cement poured down her spine, and she had as her docter put it "every possible body part removed without killing her". so the docters said there was nothing else they could do and basiccaly gave her a death sentence. She then explained that she wasnt going to give up and began looking online for any hope of living. she found this book. she followed the diet to a T, and after 3 months of this strict diet she was cancer free!! now i was never sold on the idea but actually meeting someone who did the vegan diet to cure themselves of cancer convinced me. Now understand there isnt anything special about this book but it is one of many that can give good direction. http://www.amazon.com/Natural-Strategies-For-Cancer-Patients/dp/0758202210

Russel Blaylock – A retired neurosurgeon who became a scam artist. Despite having no experimental foundation for any of his claims, he promotes himself as an expert from vaccination to chemtrails. He charges ($48-$54) for his opinion pieces and sells a supplement called the Brain Repair Formula to exploit money from people who are at risk or have Alzheimer’s and Parkinson’s. He’s also into cancer quackery.

Yet more support for including a nutrient-dense, whole food diet as a core component in comprehensive cancer recovery. Let those nutrients find all their co-factor partners in a widely varied and minimally processed eating plan. Emphasize organic, fresh, and raw.

Also, Dr. Patrick Quillin (PhD) talks a lot about "nutrient synergy" in his book: Beating Cancer with Nutrition > http://www.amazon.com/Beating-Cancer-Nutrition-Fourth-Rev/dp/096383729X

I glanced through but didn't see this one recommended: Keto for Cancer by Miriam Kalamian.

Wishing you the best response to treatment, a fast recovery and a lifetime cancer-free thereafter.

I will show you the data, and please do not tell me its delusional, if I was unable to show you the data, or you showed me data showing im wrong, then I will gladly accept that you are right. I am still learning about this myself and I will not pretend to know everything.

http://www.amazon.com/China-Study-Comprehensive-Nutrition-Implications/dp/1932100385

the biggest one ever is The China Study. Over 800 million people in china were studied over a long period of time and the results are quite amazing. you can read about it all over the place or simply buy the book or find it at a local library if they have it. The basis for what I am saying is this: The body has a wonderful fighting system that is able to fight off any infection or disease normally. The people that normally eat a lot of processed foods are in cities and places where its very easy to consume large amounts of unhealthy food.

another book I am reading now is this one:
http://www.amazon.com/Healing-Gerson-Way-Defeating-Diseases/dp/0976018624/ref=sr_1_1?s=books&ie=UTF8&qid=1331091809&sr=1-1

and its awesome at explaining how the body works and what substances break down our bodies natural defenses, letting chronic illnesses take over. I hope you will look at these books. I got a cousin dying in a hospital right now of a tumor that has come back again, after almost 2 years of chemo, and now his body is to weak and toxic from the chemo to fight anymore and he has less than a 20% chance of living. Damaging the defense of the body only bring the problem back and with even worse effects.

Also, the documentary Forks over Knives is a good one to watch. Two doctors who are masters in their fields of work realize diet is very important in keeping infection and disease away from the body. I wish you the best my friend
