hmmm... well, it's not hugely practical for me to cook artichokes. i grew up eating them but the season here in the pacific NW is sorta short for them. looking at canned hearts, which is far more practical, i see that they are very much in that almost too-much-carb land. like olives and nuts, their carbs have to be managed macro-wise. here is a product on amazon, i admit i'm tempted because i like them so: https://www.amazon.com/Reese-Artichoke-Bottoms-14-Ounce-Cans/dp/B000FD78O8/ref=pd_sbs_325_6?_encoding=UTF8&refRID=95YSVRKVBWTH4GND3PBD&th=1

as you can see, its 5 carbs for 2 hearts. that's gonna require that i reduce carbs elsewhere. it might be worth it. i'm still deciding. thanks for bringing it up! i'm always looking for new foods.
